Herb Thyme Winter German 1000 Non-GMO, Heirloom Seeds
German Winter Thyme is an aromatic perennial culinary herb with branching, woody stems and small fragrant leaves. Its savory flavor makes freshly harvested sprigs useful in soups, roasted vegetables, herb butter, and meat dishes. Grow it in a sunny herb garden or a well-drained container for convenient kitchen harvests. Winter performance depends on local climate, drainage, and exposure rather than the variety name alone. This packet contains 1,000 Non-GMO, heirloom seeds for planting.
Germination Rate: 93%. Test Date: 5/26. JSS.
Culinary Uses
- Roasted Vegetables: Toss fresh leaves with carrots, potatoes, squash, or onions for fragrant savory flavor.
- Soups and Stews: Simmer whole sprigs in broth, bean soups, or slow-cooked dishes. Remove woody stems before serving.
- Meat and Poultry: Combine thyme with garlic and olive oil for marinades, rubs, or pan sauces.
- Herb Butter: Blend stripped leaves into softened butter for cooked vegetables, fish, or warm bread.
- Drying: Dry harvested sprigs in an airy location, then strip the leaves into a labeled airtight container for later cooking.
- Flavoring Infusions: Use thyme for culinary aroma without treating herbal beverages as medicine.

Growing Directions
- Sunlight: Choose full sun with at least 6–8 hours of direct light daily.
- Soil: Use loose, well-drained soil. Avoid locations where water collects around the roots.
- Starting Seeds: Start indoors 6–8 weeks before the last frost or sow outdoors after frost danger has passed. Follow packet directions for the tiny seeds and avoid burying them deeply.
- Seedling Moisture: Keep the growing medium lightly and evenly moist while seedlings establish, without saturating it.
- Transplanting: Harden off indoor-grown plants gradually before transplanting outdoors.
- Spacing: Allow approximately 12–18 inches between plants for branching and airflow, adjusting to growing conditions.
- Watering: After establishment, allow the soil to dry slightly between waterings. Check container moisture more frequently during hot weather.
- Feeding: Avoid excessive fertilizer. Use light feeding only if needed and follow label directions.
- Harvesting: Snip tender tips regularly while leaving plenty of foliage. Avoid cutting deeply into bare woody stems.
- Containers: Use a pot with drainage holes and a well-drained mix. Container roots may need additional winter protection.
- Winter Care: Consult regional recommendations for overwintering. Cold tolerance does not guarantee survival in every climate, particularly with wet soil or exposed containers.

Honey-Thyme Roasted Carrots
Freshly harvested German Winter Thyme adds savory fragrance to sweet roasted carrots. This recipe uses harvested herb leaves, not the planting seeds in the packet.
Yield: 4 side servings. Preparation: 10 minutes. Cooking: 25–35 minutes.
Ingredients
- 1 1/2 pounds carrots, scrubbed or peeled
- 2 tablespoons olive oil
- 1 tablespoon honey
- 2 teaspoons fresh German Winter Thyme leaves, washed and stripped from stems
- 1/4 teaspoon salt, or to taste
- 1/4 teaspoon ground black pepper
Directions
- Heat the oven to 400°F. Cut carrots lengthwise into halves or quarters of similar thickness.
- Toss the carrots with olive oil, thyme, salt, and pepper. Spread in a single layer on a rimmed baking sheet.
- Roast for 20 minutes, then turn the carrots.
- Drizzle with honey and toss carefully. Roast for another 5–15 minutes, until tender with golden edges, checking so the honey does not burn.
- Transfer to a serving dish and serve warm.
Option: Substitute maple syrup for honey for a vegan version.
Storage: Refrigerate leftovers in a covered container within 2 hours and use within 3–4 days. Reheat thoroughly before serving. Do not serve honey to infants under 12 months.
