Two Harvests from One Crop
- Tender salad roots: Young salad turnips offer a crisp texture and mild sweetness for slicing into salads or serving fresh.
- Comfort-food favorites: Roast, mash or simmer traditional turnips in soups and stews. Flavor and texture vary with variety and harvest size.
- Useful leafy greens: Cook turnip greens by steaming, sautéing or adding them to soups. Tender young leaves can also be used in salads.
- Variety in the garden: Compare individual listings for root color, flavor, days to maturity and recommended harvest size.
Tips for Growing Turnips
Turnips grow best in cool weather. Plan spring or fall sowings around your local climate and frost dates. Direct sow in loose, well-drained soil, following the seed packet's planting depth and spacing directions.
Thin seedlings to give roots room to develop, keep soil evenly moist and control weeds while plants are young. For a staggered harvest, make successive sowings while conditions remain suitable. Harvest roots at the size recommended for the variety rather than leaving them to become oversized and woody.
If you want both roots and greens, take only a few outer leaves from each plant so enough foliage remains to support root growth.
