Trucker's Yellow Dent Corn brings golden-yellow grain to the garden and pantry. Grow this non-GMO heirloom for mature dent corn that can be dried, shelled, and milled into cornmeal or grits. Imagine bringing harvested ears to the kitchen, revealing rows of yellow kernels, and turning your own cornmeal into a warm skillet of cheddar cornbread. This is a dent corn listing, not a modern sweet-corn variety. Each packet contains 100 seeds.

Germination Rate: 90%. Test Date: 12/25. TLM.

Texas Minimum Germination Rate: 75%

Why Choose Trucker's Yellow Dent Corn?

  • Golden-yellow grain: Mature yellow kernels offer a classic starting point for homemade cornmeal dishes.
  • Pantry potential: Properly dried harvested grain can be stored whole and milled as needed.
  • Versatile milling: Choose a finer grind for baking or a coarser grind for thoroughly cooked grits.
  • Heirloom seed: Grow a traditional variety and preserve selected traits through careful seed saving and isolation.
  • Non-GMO: Plant a variety without genetic engineering.

Planting Tips for Success

  • Sunlight: Choose a site with at least 6–8 hours of direct sun and room for corn stalks.
  • Soil: Prepare fertile, well-drained soil with compost or well-aged manure as appropriate.
  • Sowing: Direct sow after frost when soil is warm, around 60°F or higher. Plant approximately 1–2 inches deep, following packet guidance.
  • Spacing and pollination: Thin according to packet instructions and plant in a block of at least four rows rather than one long row for better wind pollination.
  • Water: Keep moisture consistent, particularly during tasseling, silking, and ear development.
  • Fertilizer: Use soil-test and label guidance for nitrogen feeding; avoid guessing fertilizer amounts.
  • Support and care: Choose a site protected from strong winds. Weed carefully without damaging shallow roots and monitor stalks for leaning and pests.
  • Grain harvest: Let ears reach full maturity and dry on the stalk when weather permits. Finish drying in an airy sheltered place until kernels are fully hard and dry. Discard moldy grain.
  • Isolation: Separate other corn varieties by distance or flowering time when preserving variety traits or saving seed.

  • Polenta: Cook yellow meal slowly with liquid, stirring as needed for a creamy side dish.

  • Soups: Use properly prepared and fully cooked grain or hominy rather than untreated hard dry kernels.

Trucker's Yellow Cheddar Skillet Cornbread

Golden cornmeal and cheddar make a savory side for beans, soup, or garden vegetables. Serves 8. Prep time: 15 minutes. Bake time: 20–25 minutes.

Ingredients

  • 1 cup fine- to medium-ground Trucker's Yellow cornmeal from sound, fully dried harvested corn, not planting seed
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1/4 cup melted butter, slightly cooled
  • 1 cup shredded cheddar made with pasteurized milk
  • 1 tablespoon vegetable oil for the skillet

Directions

  1. Heat oven to 400°F. Coat a 10-inch oven-safe cast-iron skillet with oil.
  2. Whisk cornmeal, flour, baking powder, and salt. Use fine- to medium-ground meal, not coarse grits or masa harina.
  3. In another bowl, whisk milk, eggs, and melted butter.
  4. Fold wet ingredients into dry ingredients just until combined, then fold in cheddar.
  5. Spread batter in the skillet. Bake 20–25 minutes until the center is set and a toothpick inserted in the center comes out clean.
  6. Rest 10 minutes before slicing. Handle the hot skillet and handle with oven mitts.

Options, Storage, and Safety

Add 1 finely diced jalapeño for a spicy variation or omit cheese for plain cornbread. Coarse homemade meal may need further milling. Never use moldy grain or taste raw batter, flour, or meal. Cool and refrigerate leftovers covered within 2 hours, or within 1 hour above 90°F. Use refrigerated leftovers within 3–4 days or freeze portions.
