- 2 cups freshly shelled, harvested Fordhook Bush 242 lima beans, rinsed
- 2 cups sweet corn kernels
- 1 tablespoon butter and 1 tablespoon olive oil
- 1 small onion, diced
- 1 red bell pepper, diced
- 2 garlic cloves, minced
- ¼ cup water or low-sodium vegetable broth, plus more as needed
- ½ teaspoon salt, or to taste
- ¼ teaspoon black pepper
- 1 tablespoon chopped fresh parsley
- 1 to 2 teaspoons lemon juice, optional
Directions
- Place the freshly shelled lima beans in a saucepan and cover generously with water.
