Texas Minimum Germination Rate: 75%

Why Choose Radish Red Meat Watermelon?

  • Striking Interior Color: Slice through the pale exterior to reveal a vivid dark pink center for eye-catching salads and garnishes.
  • Sweet, Mild Flavor: Enjoy a crisp root with a gentler flavor than many standard radishes, especially when grown in cool weather.
  • Generous Root Size: Round roots about 2–4 inches across provide plenty of slices for fresh eating and quick pickling.
  • Fall Garden Favorite: Time your sowing so roots develop as temperatures cool for appealing flavor and color.
  • Heirloom and Open-Pollinated: Grow a traditional non-GMO variety; seed saving requires proper isolation and allowing plants to flower.

Planting Tips for Success

  • Timing: Direct sow in summer through early fall for a cool-weather harvest. Adjust dates to your local climate; spring planting can lead to bolting before roots mature.
  • Sunlight: Choose full sun with at least 6 hours of direct light daily.
  • Soil: Prepare loose, well-drained soil, approximately pH 6.0–7.0. Remove stones and hard clods so roots can develop evenly.
  • Depth and Spacing: Sow about 1/2 inch deep and 2 inches apart, then thin to 4–6 inches. Sow in place rather than transplanting.
  • Watering: Keep soil consistently moist without waterlogging. Uneven moisture can contribute to cracking and poor texture.
  • Fertilizing: Use modest fertility based on soil needs. Avoid excess nitrogen, which encourages leafy growth at the expense of roots.
  • Support and Care: No staking is needed. Weed gently around shallow roots and avoid crowding.
  • Harvesting: Begin checking around 50 days, allowing for growing conditions. Harvest promptly at your preferred size before roots become pithy.

  • Stir-Fried: Cook slices briefly with garlic and other vegetables to retain some crunch.
  • Fresh Garnish: Add thin rounds or matchsticks to tacos, sandwiches, and snack boards.

  • Variety Disclaimer: Sow from summer through fall for cool-weather root development. Harvest promptly to help prevent pithiness. Color, size, maturity, and flavor vary with climate and growing conditions.
  • Seed Storage: Store seeds in a cool, dry place away from direct sunlight. Properly stored radish seeds may remain viable for 4–5 years.
  • Planting Zones: Grow as a cool-season crop, timing sowings to local temperatures rather than hardiness zone alone. In warmer Zones 9–11, local conditions may allow fall and winter sowings.

Lemon-Herb Watermelon Radish Salad

Turn harvested Red Meat Watermelon radishes into a crisp, colorful side dish. This recipe uses harvested roots, not the planting seeds in this packet. Serves 4. Preparation: 15 minutes. Resting: 10 minutes. No cooking required.

Ingredients

  • 1 pound harvested watermelon radishes, trimmed and scrubbed
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons extra-virgin olive oil
  • 1/4 teaspoon salt, plus more to taste
  • 1/8 teaspoon freshly ground black pepper
  • 2 tablespoons chopped fresh parsley
  • 2 scallions, thinly sliced

Directions

  1. Wash the radishes under running water, trim both ends, and remove any damaged areas. Peel only if the skins are tough.
  2. Slice into very thin rounds with a sharp knife or a mandoline fitted with a hand guard.
  3. Whisk the lemon juice, olive oil, salt, and pepper together in a large bowl.
  4. Add the radish slices and toss well. Let stand for 10 minutes to soften slightly while keeping their crunch.
  5. Fold in the parsley and scallions. Taste and adjust the seasoning, then serve chilled or immediately.

Serving and Storage

Serve alongside grilled dishes, sandwiches, or grain bowls. For extra crunch, soak the plain slices in ice water for 10 minutes, then drain and dry before dressing. Refrigerate leftovers promptly in a covered container and use within 2 days for best texture. This fresh salad is not a shelf-stable preserve.
