Red Burgundy Short-Day Onion is a dependable heirloom for southern and warm-climate gardens with suitable day length. Round, small-to-medium bulbs develop glossy deep-red skin, crisp white-and-purple flesh, and a mild, pleasantly sweet onion flavor. Pull a mature bulb, slice its colorful rings on your cutting board, and roast wedges until their edges turn sweet and tender. Includes 1000 non-GMO, heirloom seeds.

Why Choose Red Burgundy Short-Day Onion Seeds?

  • Short-day performance: Bulb formation suits southern regions and planting schedules with the appropriate shorter daylight requirements.
  • Deep-red color: Burgundy skin and purple-ringed flesh brighten fresh and cooked dishes.
  • Mild, sweet flavor: Versatile bulbs work in salads, sandwiches, salsas, and roasted side dishes.
  • Flexible harvest: Harvest green onions as needed or grow plants to mature bulbs.
  • Open-pollinated heirloom: Grow a traditional variety with familiar garden-to-table character.

Planting Tips for Success

  • Timing: Follow your local short-day onion calendar, commonly fall or winter sowing in southern gardens. Planting time and day length determine bulb development.
  • Sun: Choose full sun and good air circulation.
  • Soil: Prepare loose, fertile, well-drained soil with organic matter. Avoid compaction that restricts bulb expansion.
  • Sowing: Sow about 1/4 inch deep, cover lightly, and keep evenly moist during germination.
  • Spacing: Thin to 4–6 inches apart for mature bulbs, or closer for green-onion harvests.
  • Water: Maintain steady moisture while bulbs develop without waterlogging. Reduce watering as tops mature and fall.
  • Fertilizer: Provide balanced fertility early according to soil needs and fertilizer label directions. Avoid excess nitrogen late in growth.
  • Support and care: No staking or trellising is needed. Weed gently because onion roots are shallow and compete poorly.
  • Harvest and cure: Lift mature bulbs when tops bend and begin drying. Cure in a dry, shaded, well-ventilated place before storing.

Balsamic-Roasted Red Burgundy Onion Wedges

Roasting softens the colorful layers and brings out their natural sweetness. Serves 4 as a side. Prep time: 15 minutes. Cook time: 30–40 minutes.

Ingredients

  • 1 1/2 pounds harvested Red Burgundy onions
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh thyme leaves, plus a little for serving
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1 additional teaspoon balsamic vinegar, optional for finishing

Directions

  1. Heat oven to 400°F. Line a rimmed baking sheet with parchment rated for that temperature.
  2. Peel onions and rinse under running water. Trim the dry root ends, leaving enough of the base intact to help hold wedges together. Cut smaller onions into quarters and larger ones into 6 wedges.
  3. Toss wedges with olive oil, 1 tablespoon balsamic vinegar, thyme, salt, and pepper.
  4. Spread in one layer with a cut side down. Roast 30–40 minutes, turning gently halfway through, until tender and browned at the edges. Check smaller wedges earlier.
  5. Transfer to a serving dish, scatter with fresh thyme, and add the optional finishing vinegar if desired. Serve warm.

Options and Storage

Use rosemary instead of thyme, or serve cooled wedges over cooked grains. Refrigerate leftovers in a covered container at 40°F or below within 2 hours, or 1 hour above 90°F. Use within 3–4 days and reheat leftovers to 165°F.
