This Chinese specialty offers a mild mustard flavor, making it versatile for raw salads or lightly cooked dishes like stir-fries and soups. The plant produces long, slender, red-purple stems that can be hand-harvested multiple times by snapping tender shoots 8 to 10 inches long, ensuring continuous yield.
