Corn Dent Oaxacan is an authentic heirloom from Southern Mexico, celebrated for striking emerald green kernels and richly colored cornmeal. Plants reach approximately 7 feet and produce robust 6–10-inch ears with well-developed dent characteristics. The soft-flour starch grinds beautifully for specialty cornmeal, tamales, tortillas, polenta, and artisan baking, while the dramatic green ears also bring unusual color to fall displays. This open-pollinated, non-GMO variety matures in roughly 95 days.

Germination Rate: 97%. Test Date: 12/25. FF.

Why Choose Oaxacan Green Dent Corn?

  • Emerald Green Kernels: Grow unusual green ears that stand out in the garden, at market, and in fall displays.
  • Distinctive Cornmeal: Dry kernels grind into vibrantly colored cornmeal with a complex flavor profile.
  • Culinary and Ornamental: Grow one crop for specialty grain uses, traditional dishes, and striking dried arrangements.
  • Impressive Plants: Vigorous plants reach approximately 7 feet and produce 6–10-inch ears.
  • Mexican Heritage: Preserve a distinctive heirloom variety associated with traditional Oaxacan agricultural selection.
  • Open-Pollinated: Save seed from properly isolated plants for future seasons.
  • Non-GMO Seeds: Grow a traditional, open-pollinated variety without genetic engineering.

Planting Tips for Success

  • Sunlight: Choose a location with at least 6–8 hours of full sun for strong stalks and ear development.
  • Soil: Use fertile, well-drained soil with a target pH of about 6.0–6.8. Amend with compost or aged manure before planting.
  • Planting: Direct sow after the last frost when soil temperatures reach about 60°F. Plant seeds 1–2 inches deep.
  • Spacing: Space seeds 4–6 inches apart, then thin plants to 8–12 inches apart. Use blocks of at least four rows for better pollination.
  • Watering: Keep soil consistently moist, especially during tasseling and ear development.
  • Fertilizing: Corn is a heavy feeder. Side-dress with nitrogen when plants reach knee height and again around tasseling.
  • Harvesting for Cornmeal: Allow ears to dry on the stalk, then dry them indoors for another 1–2 weeks until kernels are hard. Shell, grind, or store whole.
  • Harvesting for Displays: Cut mature, fully colored ears or stalks and hang them in a dry, well-ventilated location.
  • Isolation: To help preserve kernel color and variety purity, isolate from other corn varieties by distance or by separating flowering times.
