This is food grade corn for grinding into flour or cornmeal. This heirloom, high-protein corn is specifically used for making artisanal, light green-tinted flour, meal or grits. Green grits may take a bit of getting used too but they are really tasty.

"Green cornmeal delivers a robust, nutty flavor with subtle earthy sweetness that elevates cornbread, polenta, and traditional dishes. This nutrient-dense variety features a slightly coarser texture and deeper taste profile compared to standard white cornmeal. Perfect for home cooks seeking authentic flavor and added nutritional value in their kitchen staples.

Cornmeal vs. Flour: While it is often called "green cornmeal" because of its texture, it is also referred to as "flour" when ground very finely for making tamales.

Masa: When Oaxacan green corn is nixtamalized (soaked in an alkaline solution) and ground, it is called Oaxacan green masa or masa harina, which is used specifically for tortillas and tamales.

Color: The ground product often retains a light green hue due to the color of the original kernels. 1 pound of dent corn will produce about 1 pound of flour.

Oaxacan green corn is an ancient variety used by the Zapotec Indian people for many years.

Corn Dent Oaxacan is an authentic heirloom variety originating from Southern Mexico, celebrated for its striking emerald green kernels that yield distinctive, vibrantly colored cornmeal with complex flavor profiles unavailable from conventional yellow or white corn. This heritage cultivar represents generations of traditional selection, preserving genetic diversity while delivering exceptional culinary and aesthetic qualities. Plants reach approximately 7 feet in height, producing robust ears ranging from 6 to 10 inches in length with well-developed dent characteristics ideal for grinding. The soft-flour starch mills beautifully into specialty cornmeal prized by artisanal bakers, traditional cooks, and culinary professionals seeking authentic regional flavors for Mexican cuisine, polenta, and specialty grain applications. Beyond the kitchen, the distinctive emerald ears provide striking visual interest for fall displays and ornamental garden arrangements. Maturing in roughly 95 days, Oaxacan adapts well to diverse growing conditions and shorter seasons, making it accessible to gardeners across multiple climate zones. Oaxacan Corn aligns with the values of heritage gardeners and environmentally conscious growers committed to preserving traditional varieties and responsible stewardship.
