Paris White Cos Romaine Caesar Salad

Use harvested romaine leaves, not the planting seeds in this packet. Serves 4 as a side salad. Prep time: 20 minutes. Crouton cooking time: 10 to 15 minutes.

Ingredients

  • 8 cups chopped harvested Paris White Cos romaine, washed and dried
  • 2 cups bread cubes, approximately 3/4 inch across
  • 1 tablespoon olive oil
  • 1/4 cup commercial mayonnaise made with pasteurized eggs
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 small garlic clove, finely grated
  • 1 teaspoon anchovy paste, optional
  • 2 tablespoons finely grated Parmesan for the dressing
  • 1/4 cup shaved Parmesan for serving
  • 1 to 2 tablespoons water, as needed
  • Salt and black pepper, to taste

Directions

  1. Heat oven to 375°F. Toss bread cubes with olive oil and a little salt and pepper. Spread on a baking sheet and bake for 10 to 15 minutes, turning once, until crisp and golden. Let cool.
  2. Remove damaged lettuce leaves. Separate the remaining leaves, rinse under cool running water and dry thoroughly. Chop into bite-sized pieces and keep chilled until assembling.
  3. Whisk mayonnaise, lemon juice, Dijon, garlic, optional anchovy paste and grated Parmesan in a small bowl. Add water a little at a time until pourable. Taste and season.
  4. Toss romaine with enough dressing to coat lightly. Add cooled croutons and shaved Parmesan.
  5. Finish with black pepper and serve immediately for the best crunch.

Options and Storage

  • Without anchovies: Omit the anchovy paste for a milder dressing. For a vegetarian version, also choose Parmesan-style cheese made without animal rennet.
  • Make ahead: Prepare dressing, lettuce and croutons separately. Refrigerate lettuce and dressing; keep cooled croutons dry and covered. Assemble just before serving.
