Crispino Iceberg Wedge Salad
A crunchy garden-to-table salad made with harvested Crispino lettuce, not the planting seeds in this packet. Serves 4. Prep time: 15 minutes. Bacon cooking time: approximately 10 minutes.
Ingredients
- 1 harvested Crispino iceberg lettuce head
- 1 cup cherry tomatoes, halved
- 4 slices bacon, cooked until crisp and crumbled
- 1/2 cup prepared blue cheese dressing
- 1/4 cup crumbled blue cheese
- 2 tablespoons chopped fresh chives
- Freshly ground black pepper, to taste
Directions
- Cook the bacon according to its package directions until fully cooked and crisp. Drain, cool and crumble. Keep raw bacon and its utensils separate from fresh vegetables.
- Remove damaged outer lettuce leaves. Cut the head into four wedges, leaving enough of the core to hold each together. Rinse under cool running water, gently opening the layers to remove soil. Drain thoroughly and pat dry.
- Place the wedges on a serving platter or four individual plates.
- Divide the dressing, tomatoes, bacon, blue cheese and chives evenly among the wedges. Finish with black pepper.
- Serve immediately while the lettuce is cool and crisp.
