Why Choose Beit Alpha Cucumber?

  • Tender thin skin: Enjoy fresh cucumbers without peeling when skin is tender and fruit is thoroughly washed.
  • Sweet, crisp flesh: Mild flavor makes these cucumbers useful for salads, snacks, and yogurt sauces.
  • Parthenocarpic fruit set: Can produce fruit without pollination, useful in protected growing spaces.
  • Productive plants: Gynoecious plants support abundant harvests with suitable care.
  • Good shelf life: Proper harvesting and prompt storage help maintain quality.
  • Seasonal flexibility: Spring and fall plantings suit regions with appropriate warm growing conditions.
  • Open-pollinated heirloom: A traditional variety for gardeners who value seed-saving possibilities; isolation and appropriate pollination are needed to maintain true-to-type seed.

Planting Tips for Success

  • Timing: Start indoors 3–4 weeks before the last frost, or direct sow after frost danger has passed and soil reaches at least 65°F.
  • Sowing: Plant 1/2–1 inch deep in fertile, well-drained soil.
  • Spacing: Space plants 12–18 inches apart in rows 36–60 inches apart.
  • Sun: Provide at least 6–8 hours of direct sunlight daily.
  • Water: Provide about 1 inch weekly, adjusting for rain, heat, soil, and plant needs. Keep foliage as dry as practical.
  • Support: Train vines onto a sturdy trellis or fence for straighter fruit, improved airflow, and easier picking.
  • Fertilizing: Side-dress when vines begin to run, using a balanced fertilizer according to label directions. Avoid excess nitrogen.
  • Harvest: Pick frequently at 4–6 inches while skins are tender to encourage continued production.
  • Plant care: Monitor for cucumber beetles and mildew. Remove damaged foliage as appropriate and maintain airflow.

Beit Alpha Cucumber-Dill Tzatziki

Sweet, thin-skinned cucumbers make a refreshing yogurt dip for pita, vegetables, or grilled foods. Makes about 2 cups, approximately 8 servings. Prep time: 15 minutes, plus 10 minutes draining and 30 minutes chilling.

Ingredients

  • 2 medium harvested Beit Alpha cucumbers, about 8 ounces total
  • 1 1/2 cups plain Greek yogurt made with pasteurized milk
  • 1 tablespoon extra-virgin olive oil, plus a little for serving
  • 1 tablespoon fresh lemon juice
  • 1 small garlic clove, finely minced
  • 2 tablespoons finely chopped fresh dill
  • 1/4 teaspoon salt, plus more to taste
  • 1/8 teaspoon black pepper

Directions

  1. Rinse cucumbers under running water and scrub gently with a clean produce brush. Trim ends and grate coarsely with tender skin intact.
  2. Place grated cucumber in a fine-mesh strainer for 10 minutes. Wrap in a clean kitchen towel and squeeze out excess liquid.
  3. Stir yogurt, olive oil, lemon juice, garlic, dill, salt, and pepper in a bowl.
  4. Fold in drained cucumber. Cover and refrigerate for at least 30 minutes to blend flavors.
  5. Taste and adjust seasoning. Drizzle lightly with olive oil and serve chilled with pita or washed vegetable slices.

Options and Storage

Use chopped mint instead of some of the dill, or a thick plain unsweetened dairy-free yogurt alternative. Store covered in the refrigerator at 40°F or below and use within 3–4 days. Stir before serving. Refrigerate promptly and discard if left at room temperature longer than 2 hours, or 1 hour above 90°F.
