Why Choose Red Ace Pelleted Beet Seeds?
- Classic red roots: A versatile harvest for roasting, steaming, fresh salads, and tested pickling recipes.
- Easy-to-handle pellets: The coating makes individual seeds easier to see and space during planting.
- Reliable garden performance: Red Ace is valued as an adaptable standard red beet, rather than for perfectly uniform roots.
- Edible tops: Tender, healthy beet greens provide another useful harvest for sautéing and soups.
- Four packet sizes: Select 40, 60, 100, or 200 seeds for a small bed or successive plantings.
What Are Pelleted Seeds?
Pelleted seeds have a coating that creates a more uniform shape and makes sowing easier. Keep the seedbed evenly moist during germination so the coating can soften and break down. Learn more about pelleted seeds.
Planting Tips for Success
- Plant in cool weather: Direct sow in early spring or late summer for a fall crop, adjusting timing to your local growing season.
- Prepare the bed: Choose full sun to partial shade and loose, fertile, well-drained soil without stones or hard clumps.
- Sow carefully: Plant approximately 1/2 inch deep. Keep the coating and surrounding soil consistently moist while seedlings emerge.
- Allow room for roots: Thin seedlings to approximately 3 to 4 inches apart. Packet size refers to seed quantity, not a different plant-spacing requirement.
- Water consistently: Maintain even soil moisture to support tender roots and steady growth.
- Feed moderately: Incorporate compost before planting and fertilize according to soil-test or label guidance. Excess nitrogen can favor leaves over roots. Beets do not need stakes or cages.
- Plan successive sowings: Sow small batches during suitable cool weather to spread out the harvest.
- Harvest for tenderness: Pull roots at your preferred young, tender size. Harvest greens selectively without stripping plants that are still developing roots.

Lemon-Thyme Roasted Red Ace Beets
Turn harvested Red Ace beet roots into a simple, colorful side dish. This recipe uses harvested vegetables, not planting seeds. Serves 4. Prep: 15 minutes. Cook: 35 to 45 minutes.
Ingredients
- 1 1/2 pounds harvested red beets, tops removed
- 2 tablespoons olive oil
- 1 teaspoon fresh thyme leaves, or 1/3 teaspoon dried thyme
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper
- 1 teaspoon finely grated lemon zest
- 1 tablespoon fresh lemon juice
Directions
- Heat the oven to 400°F. Scrub the beets under running water, trim, and peel if desired. Cut into approximately 1-inch wedges or chunks.
- Toss the beets with olive oil, thyme, salt, and pepper. Spread in a single layer on a rimmed baking sheet.
- Roast for 35 to 45 minutes, turning halfway through, until a fork slides easily into the largest pieces. Add cooking time as needed for larger pieces.
- Transfer to a serving bowl. Toss with lemon zest and lemon juice, taste, and adjust seasoning. Serve warm.
Recipe Tips and Storage
Cut pieces evenly for consistent cooking. Beet juice can stain hands and cutting boards, so protect porous surfaces. Reserve healthy greens for a separate sauté. Refrigerate leftovers in a covered container within 2 hours, or 1 hour above 90°F, and use within 3 to 4 days. This is not a canning recipe.
