Purple Vienna Kohlrabi brings ornamental color and crisp, mild flavor to the cool-season garden. Plants develop distinctive purplish foliage and swollen above-ground bulbs that are best harvested at approximately 2–2½ inches in diameter, when the texture is tender and the flavor is delicate. The bulbs have a mild turnip-cabbage character that works beautifully raw or cooked. Purple Vienna grows slightly larger and matures somewhat later than White Vienna, giving succession plantings a useful range of harvest times.
