Texas Minimum Germination Rate: 55%

Why Choose Rainbow Hybrid Carrots?

  • Colorful harvests: Orange, yellow, and white roots add visual variety to your kitchen.
  • Easier sowing: The pellet coating makes small carrot seeds easier to handle and space.
  • Kitchen versatility: Enjoy your harvested roots raw, roasted, steamed, or added to soups.
  • Four packet sizes: Select the seed count that suits your garden.

Planting Tips for Success

  • Location: Choose full sun and loose, well-drained soil, removing stones that can interfere with root development.
  • Sowing: Direct sow about 1/4 inch deep during cool-season planting windows suited to your area.
  • Pellet moisture: Keep the seedbed evenly moist so the pellet can dissolve; do not allow it to dry out during germination.
  • Spacing: Thin seedlings to about 2–3 inches apart to give roots room to develop.
  • Feeding: Use a soil test to guide fertilizing and avoid excessive nitrogen, which favors foliage over roots.
  • Care: Weed gently around shallow roots and maintain consistent moisture. Carrots do not need staking.

Lemon-Garlic Roasted Rainbow Carrots

Use harvested Rainbow carrots for this colorful side dish. Planting seeds are not recipe ingredients. Serves 4. Prep: 15 minutes. Cook: 25–35 minutes.

Ingredients

  • 1 1/2 pounds harvested Rainbow carrots, washed and trimmed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon ground black pepper
  • 2 garlic cloves, finely minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon finely grated lemon zest
  • 1 tablespoon chopped fresh parsley

Directions

  1. Heat the oven to 425°F. Line a rimmed baking sheet with parchment suitable for that temperature.
  2. Cut carrots into even batons or lengthwise halves, about 1/2 inch thick. Cut long pieces shorter as needed for even cooking.
  3. Toss with olive oil, salt, and pepper. Spread in one layer without crowding.
  4. Roast for 20 minutes, turning once. Toss with the garlic and roast for another 5–15 minutes, until tender and lightly caramelized.
  5. Toss with lemon juice and zest, sprinkle with parsley, and serve warm.

Options: Substitute fresh thyme for parsley or add a little extra lemon at the table. Refrigerate leftovers in a covered container within two hours and use within 3–4 days.
