Recipe: Chilled Tendergreen Cucumber-Dill Yogurt Salad

A refreshing side dish featuring crisp cucumber and a light, creamy dressing. Use harvested cucumbers, not planting seeds. Serves 4. Prep: 15 minutes. Drain: 10 minutes. Chill: 20 minutes. No cooking required.

Ingredients

  • 1 pound young Burpless Tendergreen cucumbers
  • ½ teaspoon salt, divided, or to taste
  • ½ cup plain Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh dill
  • 1 teaspoon olive oil
  • ¼ teaspoon black pepper
  • Lemon wedges, optional

Directions

  1. Wash and trim cucumbers. Slice thinly into rounds or half-moons, peeling only if desired.
  2. Toss with ¼ teaspoon salt in a colander and let drain for 10 minutes. Pat gently dry with a clean towel.
