Skillet-Caramelized Texas 1015Y Onions

Serves: 4 as a topping. Prep: 10 minutes. Cook: 30 to 40 minutes. Use harvested Texas 1015Y onion bulbs, not the seeds in the packet.

Ingredients

  • 2 large harvested Texas 1015Y onions, peeled and thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/4 teaspoon salt, or to taste
  • 2 to 3 tablespoons water, as needed
  • Optional: 1 teaspoon balsamic vinegar and freshly ground black pepper

Directions

  1. Peel and thinly slice the onions. Heat the olive oil and butter in a wide skillet over medium-low heat.
  2. Add the onions and salt. Cook slowly, stirring every few minutes, for 30 to 40 minutes until deeply golden and soft. Lower the heat if they brown too quickly.
  3. Add a tablespoon of water whenever browned bits collect on the pan; stir to loosen them without burning the onions.
  4. If using balsamic vinegar, stir it in during the final minute. Season to taste and serve warm on burgers, sandwiches, roasted vegetables, or toast.
