Lemon-Garlic Sautéed Red Russian Kale
Turn your harvested Red Russian kale into a tender, lemony side dish. This recipe uses fresh leaves grown in your garden, not the planting seeds in this packet.
Serves: 4 as a side. Prep: 10 minutes. Cook: 8–10 minutes.
Ingredients
- 1 pound freshly harvested Red Russian kale
- 2 tablespoons olive oil
- 3 garlic cloves, thinly sliced
- 2 tablespoons water, plus more if needed
- 1 tablespoon fresh lemon juice
- 1 teaspoon finely grated lemon zest
- 1/4 teaspoon salt, or to taste
- 1/8 teaspoon black pepper
- Optional: a pinch of red pepper flakes
Directions
- Wash the kale thoroughly under running water and drain. Remove tough stems and roughly chop the leaves. Thinly slice any tender stems you wish to use.
- Warm olive oil in a large skillet over medium heat. Add tender stems, if using, and cook for 2 minutes.
- Add garlic and optional red pepper flakes. Stir for 30–60 seconds, just until fragrant; do not let garlic burn.
- Add leaves in batches, tossing as they wilt. Add 2 tablespoons water, cover, and cook for 3–5 minutes until tender. Add a small splash of water if the skillet becomes dry.
- Uncover and toss for 1–2 minutes to evaporate excess liquid. Remove from heat and stir in lemon juice, zest, salt, and pepper.
- Serve warm alongside roasted vegetables, fish, chicken, or beans.
Tip: Tender baby leaves cook more quickly. Taste as you go and stop cooking when the leaves reach your preferred texture.
