Why Choose Yellowstone Carrots?

  • Deep-yellow roots: Add a cheerful contrast to fresh vegetable boards and cooked dishes.
  • Mild, sweet flavor: Enjoy a crisp carrot suited to salads, roasting, and steaming.
  • Strong tops: Good root attachment makes this variety useful for bunching, although loosening the soil before harvest still helps protect roots.
  • Open-pollinated variety: An option for gardeners interested in seed saving with appropriate isolation and overwintering practices.
  • Easy-to-space pellets: Coated seeds are easier to see and handle during planting.
  • Four packet sizes: Choose the quantity that suits a small bed or successive sowings.

What Are Pelleted Seeds?

Each seed is coated to create a more uniform shape and make sowing easier. Keep the seedbed evenly moist while the coating softens and seedlings emerge. Learn more about pelleted seeds.

Planting Tips for Success

  • Choose seasonal timing: Direct sow in spring or late summer for fall harvests, adjusting to local weather and frost dates.
  • Prepare loose soil: Remove stones and hard clumps and loosen the bed deeply enough for long roots. Use a suitably deep container if planting in pots.
  • Sow shallowly: Plant approximately 1/4 inch deep in fine soil. Keep the surface consistently moist while pellets soften and seedlings emerge.
  • Allow room for roots: Thin seedlings to about 4 inches apart. Packet size refers to seed quantity, not different spacing requirements.
  • Provide sun and moisture: Choose full sun and water evenly without leaving the soil waterlogged.
  • Feed moderately: Follow soil-test or fertilizer-label guidance and avoid excessive nitrogen. Carrots do not require stakes or cages.
  • Harvest gently: Begin checking around 75 days. Loosen soil before lifting roots at your preferred size and tenderness.

Lemon-Parsley Roasted Yellowstone Carrots

Use harvested Yellowstone carrots for this simple yellow-carrot side dish. Ingredients are harvested vegetables, not seed-packet contents. Serves 4. Prep: 15 minutes. Cook: 25 to 35 minutes.

Ingredients

  • 1 1/2 pounds harvested Yellowstone carrots
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon finely grated lemon zest
  • 2 tablespoons chopped flat-leaf parsley

Directions

  1. Heat the oven to 400°F. Wash carrots under running water, trim, and peel if desired.
  2. Halve lengthwise, quartering thick carrots so pieces have similar thickness. Cut extra-long pieces to fit the pan if needed.
  3. Toss with olive oil, salt, and pepper. Spread in a single layer on a rimmed baking sheet.
  4. Roast for 25 to 35 minutes, turning halfway through, until fork-tender and lightly browned. Check thinner pieces early.
  5. Toss with lemon juice, lemon zest, and parsley. Taste and adjust seasoning before serving warm.

Recipe Tips and Storage

For a buttery finish, add a small pat of butter while the carrots are hot. Allow thicker pieces extra cooking time rather than crowding the pan. Refrigerate leftovers in a covered container within 2 hours, or within 1 hour above 90°F, and use within 3 to 4 days. This is a cooked side dish, not a tested canning recipe.
