Little Finger Carrot offers sweet flavor and tender texture in a compact, approximately 4-inch root. Bright orange carrots with smooth skin and blunt tips are easy to serve whole, slice for snacks, or roast for a colorful side dish. Their smaller roots suit raised beds and sufficiently deep containers filled with loose soil. Each packet contains 1000 non-GMO, heirloom seeds.

Ready to Harvest: Approximately 60 days, depending on planting date, soil temperature, and growing conditions. Check root size rather than relying on the calendar alone.

Germination Rate: 85%. Test Date: 08/25. OSI.

Texas Minimum Germination Rate: 55%

Why Choose Little Finger Carrot?

  • Compact roots: Approximately 4-inch carrots with blunt tips make attractive whole-carrot sides and easy snacks.
  • Sweet, tender eating: Harvest young roots for fresh crunch or gently cook to highlight their sweetness.
  • Small-space potential: Grow in raised beds or containers with enough loose soil depth and drainage for root development.
  • Succession-friendly: An approximate 60-day maturity supports repeated sowings during suitable cool-weather planting windows.
  • Heirloom, open-pollinated seed: A traditional non-GMO variety. Carrot seed saving requires a second growing season and careful management of cross-pollination.

Planting Tips for Success

  • Season: Choose suitable spring or fall planting windows. Carrots favor cool conditions; use local planting guidance.
  • Soil: Prepare loose, well-drained soil free of rocks and hard clumps. Work in finished compost if needed and avoid fresh manure.
  • Direct sowing: Sow approximately 1/4 inch deep and 1/2 inch apart. Avoid transplanting because root disturbance can affect shape.
  • Germination: Keep the shallow seedbed consistently moist. The existing listing gives an approximate 10–17-day emergence window; temperature and moisture affect timing.
  • Thinning: Thin seedlings carefully to approximately 2–3 inches apart so roots have room to develop.
  • Water: Maintain even moisture and water deeply as plants establish. Avoid repeated drying and heavy saturation.
  • Feeding: Fertilize according to soil needs and label instructions. Excess nitrogen can favor foliage over roots.
  • Support and weeding: No staking is normally needed. Remove weeds gently without damaging shallow developing roots.
  • Harvest: Check roots near the 60-day estimate and harvest around 4 inches long. Loosen soil before lifting to reduce breakage.

Honey-Thyme Roasted Little Finger Carrots

Use harvested carrots, not planting seeds. Serves 4 as a side. Preparation: 10 minutes. Cooking: 20–30 minutes.

Ingredients

  • 1 pound harvested Little Finger carrots, scrubbed and tops trimmed
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 teaspoon fresh thyme leaves, or 1/3 teaspoon dried thyme
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • Optional: 1 teaspoon lemon juice

Directions

  1. Heat the oven to 400°F. Scrub carrots under running water, trim tops, and pat dry. Leave small roots whole and halve thicker ones lengthwise for even cooking.
  2. Whisk olive oil, honey, thyme, salt, and pepper in a bowl. Add carrots and toss to coat.
  3. Spread in a single layer on a lined baking sheet. Roast for 20–30 minutes, turning once, until fork-tender with lightly browned edges. Watch the honey glaze to prevent burning.
  4. Add optional lemon juice after roasting, toss gently, and serve warm.

Options and storage: Substitute maple syrup for honey if desired. Do not serve honey-containing food to children younger than 12 months. Refrigerate leftovers within 2 hours and use within 3–4 days.
