Pepper Specialty Sweet Marconi Red 50 Non-GMO, Heirloom Seeds
Pepper Specialty Sweet Marconi Red is an impressive heirloom variety that delivers both impressive size and exceptional flavor to your garden. These magnificent peppers grow nearly 8 inches long with thick, substantial walls that make them a joy to cook with. The juicy, rich flesh develops wonderful complexity as the fruit matures, starting with pleasant sweetness at the green stage and reaching peak flavor when fully ripened to a deep, glossy red. What makes Marconi Red truly special is its versatility in the kitchen. The thick walls are perfect for roasting until the skin blisters and chars, grilling for smoky depth, or stuffing with your favorite fillings. The natural sweetness shines beautifully in fresh applications too—toss them into salads, stir-fries, and fajitas, or simmer them into traditional Italian sauces where their authentic depth elevates every dish. These late-maturing plants demonstrate reliable, consistent performance across most growing conditions, producing abundant yields throughout the season.
Germination Rate: 87%. Test Date: 10/25. TLM.

Roasted Sweet Marconi Red Peppers with Garlic and Basil
Use harvested Sweet Marconi Red peppers, not the planting seeds in this packet. Makes 4 side-dish servings. Prep: 10 minutes. Roast: 20–25 minutes. Total: 30–35 minutes.
Ingredients
- 4 large ripe Sweet Marconi Red peppers
- 2 tablespoons olive oil, divided
- 1/4 teaspoon salt, or to taste
- 1/4 teaspoon ground black pepper
- 2 garlic cloves, finely minced
- 1 tablespoon fresh lemon juice
- 2 tablespoons chopped fresh basil
Directions
- Heat oven to 425°F. Line a large rimmed baking sheet with parchment paper rated for that temperature.
- Rinse and dry peppers. Halve lengthwise, remove stems, seed cores, and pale ribs, then cut into long strips approximately 1 inch wide.
- Toss strips with 1 1/2 tablespoons olive oil, salt, and black pepper. Arrange in a single layer without crowding.
- Roast for 15 minutes. Toss minced garlic with the remaining 1/2 tablespoon oil, stir into the peppers, and roast for another 5–10 minutes until peppers are tender and lightly browned. Watch closely so garlic does not burn.
- Transfer to a serving dish. Toss with lemon juice and basil. Serve warm alongside cooked beans or grains, or use as a sandwich topping.
Storage and Safety
Refrigerate leftovers in a shallow covered container within 2 hours, or within 1 hour above 90°F. Keep at 40°F or below and use within 3–4 days. Reheat leftovers to 165°F. This garlic-and-oil preparation is not shelf-stable; do not store it at room temperature or use it as a canning recipe.
