Pepper Bell Purple Beauty is one of the best varieties of purple bell peppers, highly productive and engineered to produce crisp fruits with thick flesh that deliver exceptional culinary performance. The distinctive purple coloration provides striking visual contrast in garden settings and on the dinner plate, offering both ornamental appeal and gastronomic interest. The thick-walled fruit structure ensures superior texture and handling durability, reducing post-harvest losses while maintaining quality through transport and storage. Purple Beauty peppers are delicious and beautiful, adding color to your garden and dinner plate while offering the mild sweetness characteristic of quality bell pepper varieties. The vibrant purple hue intensifies as fruits mature, creating an extended visual harvest window that showcases nature's palette throughout the growing season. The crisp texture and substantial flesh thickness make these peppers ideal for fresh eating, slicing into salads, roasting, grilling, or stuffing with savory fillings. This heirloom variety represents a traditional pepper type with proven performance across diverse growing conditions and climates.

Recipe: Fresh Purple Beauty Pepper and Chickpea Salad

Enjoy the crunch and rich purple skin of freshly harvested Purple Beauty bell peppers in a bright lemon-parsley salad. This recipe uses harvested peppers, not the planting seeds in this packet.

Servings: 4 side servings. Prep: 20 minutes. Cook: None. Optional chilling: 15 minutes.

Ingredients

  • 2 medium harvested Purple Beauty bell peppers, cored, seeded, and chopped
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 cup diced cucumber
  • 1 cup cherry tomatoes, halved
  • 1/4 cup finely diced red onion
  • 1/4 cup chopped fresh parsley
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 small garlic clove, finely minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper

Directions

  1. Wash peppers, cucumber, tomatoes, and parsley under running water before cutting. Remove pepper stems, seeds, and ribs, leaving the colorful skin on.
  2. Combine chopped peppers, drained chickpeas, cucumber, tomatoes, onion, and parsley in a large bowl.
  3. In a small bowl, whisk olive oil, lemon juice, garlic, oregano, salt, and black pepper until blended.
  4. Pour dressing over the salad and toss gently. Taste and adjust seasoning as desired.
  5. Serve immediately for maximum crunch, or refrigerate for 15 minutes before serving to let the flavors blend.

Serving Options and Storage

Serve alongside grilled food, spoon into pita bread, or add cooked, cooled quinoa for a heartier salad. Add crumbled feta if desired. Refrigerate in a covered container within 2 hours and use within 3 days. For the crispest make-ahead salad, store the dressing separately until ready to serve.
