Recipe: Honey-Thyme Roasted Rainbow Carrots
A simple side dish that highlights your garden's carrot colors. Use harvested roots, not planting seeds. Serves 4. Prep: 15 minutes. Cook: 25 to 35 minutes.
Ingredients
- 1½ pounds harvested rainbow carrots
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 teaspoon fresh thyme leaves, or ½ teaspoon dried thyme
- ½ teaspoon salt, or to taste
- ¼ teaspoon black pepper
Directions
- Heat the oven to 425°F. Wash carrots thoroughly, trim tops and peel if desired. Split thicker roots lengthwise and cut into similar-sized pieces.
- Toss with olive oil, thyme, salt and pepper. Spread in a single layer on a rimmed baking sheet.
- Roast for 20 minutes, then turn the pieces. Drizzle with honey and toss carefully.
