Why Choose Crystal White Wax Onions?

  • Petite white bulbs: Small onions are convenient for whole cooking, garnishes, and tested pickling recipes.
  • Mild flavor: A versatile choice for soups, stews, roasting, and butter-glazed side dishes.
  • Short-day variety: A useful option for southern onion-growing schedules where day length supports bulbing.
  • Heirloom and open-pollinated: Suitable for gardeners interested in traditional varieties and seed saving, with appropriate isolation and overwintering practices.

Planting Tips for Success

  • Sunlight: Choose full sun with at least 6–8 hours of direct light daily.
  • Soil: Prepare loose, fertile, well-drained soil with compost. Avoid compacted or waterlogged ground.
  • Sowing: Sow about ¼ inch deep and keep the seedbed evenly moist during germination. Follow local short-day onion sowing dates; southern schedules often begin in fall or winter.
  • Spacing: Thin to about 2–3 inches apart for small bulbs, adjusting for the desired harvest size. Leave room between rows for weeding.
  • Watering: Provide consistent moisture while plants establish and bulbs develop, without leaving the soil saturated.
  • Fertilizing: Follow a soil test or fertilizer label. Support early leaf growth, then avoid excessive nitrogen as bulbs mature.
  • Weeding and support: Weed gently around shallow roots. Bulbing onions generally do not need staking.
  • Harvest: Lift bulbs at the size you prefer. Use small fresh onions promptly; harvest conditions and curing affect storage performance.

Butter-Glazed Crystal White Wax Pearl Onions

Prepare this recipe with harvested onion bulbs, not the planting seeds in the packet. Serves 4 as a side. Prep: 15 minutes. Cook: 20–25 minutes.

Ingredients

  • 1 pound small Crystal White Wax onion bulbs
  • 2 tablespoons unsalted butter
  • ½ cup water, plus more if needed
  • 1 teaspoon sugar, optional
  • ¼ teaspoon salt, or to taste
  • ⅛ teaspoon ground black pepper
  • ½ teaspoon fresh thyme leaves, optional

Directions

  1. Rinse onions. To make peeling easier, place them in boiling water for 1 minute, drain, and cool in cold water. Trim ends minimally and remove papery skins. Leave small bulbs whole and halve larger bulbs.
  2. Place peeled onions in a wide skillet with butter, ½ cup water, optional sugar, salt, and pepper.
  3. Bring to a gentle simmer, cover, and cook over medium-low heat for 12–18 minutes until tender. Add a splash of water if the pan dries before the onions soften.
  4. Uncover and cook for 5–7 minutes, gently turning, until the water evaporates and the onions are glossy with a few lightly golden patches. Do not let the butter burn.
  5. Sprinkle with thyme if desired, taste, and serve warm.

Kitchen tip: Keep a little root end intact when trimming to help whole onions hold together.

Storage: Refrigerate leftovers in a covered container within 2 hours, or within 1 hour above 90°F. Use within 3–4 days and reheat thoroughly.
