Radish Red Meat Watermelon produces large, round radishes measuring 2–4 inches in diameter, distinguished by their plain green-white exterior that conceals a stunning dark pink interior that resembles a watermelon slice. This variety features a remarkably sweet, mild flavor that sets it apart from sharp-tasting standard radishes — the flavor and color both intensify with cooler temperatures. An important note: Watermelon Radish is a summer-to-fall sowing variety and will bolt (go to seed prematurely) if planted in spring. Sow July through September for best results. Ready to harvest in approximately 50 days.

Germination Rate: 85%. Test Date: 1/26. WILL.

Why Choose Radish Red Meat Watermelon?

  • Stunning Interior Color: Plain exterior conceals a vibrant dark pink ‘watermelon’ center — a showstopping reveal when sliced that makes every dish visually dramatic.
  • Sweet, Mild Flavor: Far sweeter and milder than standard radishes — crisp and refreshing with color that intensifies in cooler fall temperatures.
  • Impressive Size: Grows 2–4 inches in diameter — substantially larger than standard radishes, with more flesh per root.
  • Fall Garden Star: One of the best cool-season radish varieties for fall harvests — flavor and color peak after light frosts.
  • Excellent for Pickling: Vibrant pink color holds beautifully when pickled — striking as a condiment or garnish.
  • Heirloom & Open-Pollinated: Passed down through generations for at least 75 years — save seeds year after year.
  • Non-GMO Seeds: Plants whose DNA has not been altered in ways that do not occur naturally through traditional breeding methods.

Planting Tips for Success

  • Sunlight: Full sun — at least 6 hours per day for best root development and color intensity.
  • Soil: Loose, well-drained soil with a pH of 6.0–7.0. Remove rocks and hard clods to allow uniform round root development.
  • Planting: Sow summer to fall only — July through September. Spring planting causes bolting before roots develop. Direct sow ½ inch deep. Do not transplant.
  • Spacing: Sow seeds 2 inches apart in rows 12 inches apart. Thin to 4–6 inches once established — crowding causes small, misshapen roots.
  • Watering: Keep soil consistently moist — inconsistent watering causes cracking and pithy roots.
  • Temperature: Flavor and color peak in cool weather. A light frost enhances sweetness — one of the best radishes for late fall harvesting.
  • Fertilizing: Apply low-nitrogen fertilizer at planting. Avoid high nitrogen which promotes tops over root development.
  • Harvesting: Ready in approximately 50 days. Pull when 2–3 inches in diameter. Over-mature roots become pithy — harvest promptly. Roots keep well in the refrigerator for 2–3 weeks.

Cooking Methods

  • Raw in Salads: Slice thin for maximum visual impact — the pink rings are stunning against green salad leaves and require no embellishment.
  • Pickled: Quick-pickle in rice wine vinegar with salt, sugar, and ginger for a brilliantly pink condiment that holds its color beautifully.
  • Roasted: Roast halved at 400°F for 20–25 minutes — roasting mellows the flavor and caramelizes natural sugars for a surprisingly sweet result.
  • Stir-Fried: Slice and stir-fry briefly in sesame oil with garlic for a quick, colorful side dish used throughout Asian cuisines.
  • Garnish: Slice thin rounds or julienne for a striking garnish on tacos, grain bowls, ramen, and charcuterie boards.
  • Kimchi: A popular substitute for standard daikon in kimchi preparations, adding both color and mild sweetness to the ferment.
