Bring color from the garden to your dinner plate with Rainbow Swiss Chard. These non-GMO heirloom seeds produce shiny, medium-green leaves with edible stalks in shades of gold, white, red, and magenta. Plants typically reach approximately 21 to 26 inches tall under suitable conditions. Pick tender leaves for a fresh harvest or cook the leaves and colorful stalks together for a simple side dish. Choose 60, 80, 100, or 200 pelleted seeds.

Germination Rate: 93%. Test Date: 03/26. JSS.

Why Choose Rainbow Swiss Chard?

  • Colorful edible stalks: Gold, white, red, and magenta stems add interest to the garden and kitchen. Individual plants and packets may vary in color proportions.
  • Two useful textures: Tender leaves wilt quickly, while firmer stalks add a satisfying bite when cooked first.
  • Flexible harvests: Pick outer leaves while protecting the crown for continued growth when conditions permit.
  • Ornamental appeal: Shiny leaves and bright stalks work beautifully in vegetable beds and edible landscapes.
  • Easier sowing: Pellets are easier to see and handle than uncoated seed.

Planting Tips for Success

  • Choose your season: Sow in spring or for a fall crop, adjusting to local weather and frost dates.
  • Prepare the bed: Choose fertile, well-drained soil with mature compost. Use a sufficiently large container if planting in pots.
  • Sow and moisten: Plant approximately 1/2 inch deep in fine soil. Keep the seedbed evenly moist while pellets soften and seedlings emerge.
  • Allow growing room: Thin to approximately 8 to 12 inches apart for full-size plants; closer spacing can suit baby-leaf harvests.
  • Provide suitable light: Grow in sun, with afternoon protection where intense summer heat stresses plants.
  • Water and feed steadily: Avoid prolonged drying or waterlogging. Fertilize according to soil-test results and product-label directions.
  • Support and harvest: Staking is generally unnecessary. Cut outer leaves near their base without damaging the central growing point.

What Are Pelleted Seeds?

A coating gives seeds a more uniform size for easier handling and placement. Maintain consistent moisture as the coating softens. Pelleting does not guarantee germination or eliminate the need to thin seedlings. Learn more about pelleted seeds.

Garlic-Lemon Sautéed Rainbow Swiss Chard

Prepare this colorful side dish using harvested Rainbow Swiss chard, not seed-packet contents. Serves 4 as a side. Prep: 15 minutes. Cook: 10 to 12 minutes.

Ingredients

  • 1 pound harvested Rainbow Swiss chard, leaves and stalks
  • 2 tablespoons olive oil
  • 3 garlic cloves, thinly sliced
  • 2 tablespoons water, plus more as needed
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon finely grated lemon zest
  • 1/4 teaspoon salt, or to taste
  • 1/8 teaspoon black pepper
  • Lemon wedges for serving, optional

Directions

  1. Wash chard thoroughly under running water, removing soil from stalk bases. Separate stalks from leaves. Chop stalks into approximately 1/2-inch pieces and cut leaves into broad ribbons.
  2. Heat olive oil in a large skillet over medium heat. Add chopped stalks and cook for 4 to 5 minutes, stirring occasionally.
  3. Add garlic and cook for 30 seconds, stirring to prevent burning.
  4. Add leaves in batches, tossing as they wilt. Add water, cover, and cook for 3 to 4 minutes, until leaves are wilted and stalks are tender. Add a small splash of water if needed.
  5. Uncover and cook briefly to evaporate excess moisture. Stir in lemon juice, zest, salt, and pepper.
  6. Taste and adjust seasoning. Serve warm with optional lemon wedges.

Recipe Tips and Storage

Cook stalks a little longer if you prefer them very soft. Avoid overcrowding the pan; use two batches if needed. Refrigerate leftovers in a covered container within 2 hours, or within 1 hour above 90°F. Use within 3 to 4 days and reheat leftovers to 165°F. This is a cooked side dish, not a tested canning recipe.
