Kale Toscano, also known as Lacinato or dinosaur kale, is an Italian heirloom recognized by its deeply textured, dark blue-green leaves. The crinkled foliage brings striking color to the garden and a robust, earthy flavor to the kitchen. Harvest tender baby leaves in approximately 30 days or allow plants to mature for full-sized leaves in about 65 days. These non-GMO, open-pollinated seeds produce versatile kale for salads, soups, sautés, chips, and smoothies. This packet contains 1,000 seeds.

Germination Rate: 85%. Test Date: 8/25. OSI.

Why Choose Kale Toscano?

  • Versatile Harvest: Pick tender baby leaves at approximately 30 days or mature leaves at about 65 days.
  • Distinctive Texture: Deeply crinkled blue-green leaves give this variety its dinosaur kale nickname.
  • Rich Flavor: Earthy, robust leaves work well in both fresh and cooked dishes.
  • Cool-Season Performance: Well suited to spring and fall gardens and tolerant of cool conditions.
  • Italian Heirloom: A traditional variety valued in Italian cooking and home gardens.
  • Open-Pollinated and Non-GMO: Open-pollinated plants allow experienced gardeners to save properly isolated seed.

Planting Tips for Success

  • Sunlight: Plant in full sun to partial shade. Afternoon shade can help in warmer conditions.
  • Soil: Use nutrient-rich, well-drained soil with a pH of 6.0–7.5 and amend with finished compost.
  • Starting Seeds: Direct sow in early spring or fall, or start indoors 4–6 weeks before the last expected frost.
  • Spacing: Space plants 12–18 inches apart for airflow and full leaf development.
  • Watering: Keep soil consistently moist but not waterlogged. Mulch helps stabilize moisture and soil temperature.
  • Fertilizing: Apply balanced fertilizer at planting and side-dress according to label directions if growth slows.
  • Support: No staking is normally required because plants are self-supporting.
  • Harvesting: Pick outer leaves first while leaving the central growing point intact for continued production.

Cooking Methods

  • Italian Soups: Add sturdy leaves to ribollita, minestrone, bean soup, and vegetable broth.
  • Fresh Salads: Remove the firm center ribs, slice the leaves thinly, and massage them with dressing for tender salads and grain bowls.
  • Crispy Kale Chips: Remove the thick stems, tear dry leaves into pieces, toss lightly with oil and seasoning, and bake in a single layer until crisp. Dry leaves and light oil help prevent soggy chips.
  • Kale Smoothies: Blend stemmed baby leaves with banana, pineapple, mango, berries, yogurt, or your preferred milk. Start with a small handful and add more to taste for a smooth balance of earthy kale and naturally sweet fruit.
  • Sautéing: Cook sliced leaves quickly with garlic and olive oil for a classic Italian side.
  • Pasta and Beans: Stir chopped leaves into pasta, white beans, and tomato-based dishes.
