Chervil Vertissimo brings finely textured, dark green foliage and a delicate sweet anise flavor to the cool-season kitchen garden. This Brussels Winter type offers gentle licorice notes that complement salads, soups, sauces, fish, and fresh herb blends without overwhelming lighter ingredients. Its lacy leaves make a graceful addition to containers, raised beds, and herb plantings, where tender sprigs can be gathered close to cooking time. Picture snipping a small handful for softly scrambled eggs, folding fresh leaves into a finished sauce, or scattering them over a salad just before serving. Chervil is best appreciated young and fresh, with its delicate flavor added near the end of cooking rather than subjected to prolonged heat. Grow it during the cooler seasons and protect it from intense heat to help maintain a useful supply of tender foliage. Whether you are exploring classic fresh-herb combinations or adding variety to everyday meals, Vertissimo offers a rewarding garden-to-table ingredient. These non-GMO, heirloom seeds are for planting, not for direct consumption.

Germination Rate: 97%. Test Date: 05/26. JSS.

Medicinal Uses

No medical claims are made, and it is not intended to diagnose, treat, cure, or prevent any disease. Consult a qualified healthcare professional before medicinal use.

Growing Directions

  • Season: Grow chervil during the cool seasons of spring and fall. Protect it from intense heat to help delay bolting.
  • Light: Provide morning sun or partial shade, especially in warmer climates.
  • Soil: Use fertile, well-drained soil enriched with organic matter. Avoid waterlogged roots.
  • Sowing: Sow seeds shallowly, about ¼ inch deep, following packet directions, and avoid disturbing the fine roots after emergence.
  • Spacing: Thin seedlings according to packet guidance so plants have room for airflow and repeated leaf harvests.
  • Watering: Keep soil evenly moist during establishment and growth. Check containers frequently and water gently without saturating the soil.
  • Feeding: Work compost into the soil as appropriate and follow soil-test recommendations or fertilizer-label directions. Avoid excessive feeding.
  • Support: Shelter delicate foliage from strong winds; assess plants for light support if needed.
  • Succession planting: Sow small batches at intervals during the cool season for a steady supply of young leaves.
  • Harvest: Pick outer leaves as needed and use them fresh. Remove developing flower stems if your priority is tender foliage.
  • Containers: Choose pots with drainage holes and a suitable potting mix, and place them where heat and moisture can be managed.

Vertissimo Chervil Scrambled Eggs

Fresh harvested chervil adds a delicate anise note to creamy scrambled eggs. Use leaves grown from mature plants, not the planting seeds in the packet.

Servings: 2. Prep time: 5 minutes. Cook time: 5–7 minutes.

Ingredients

  • 4 large eggs
  • 2 tablespoons milk
  • 1 tablespoon butter
  • 2 tablespoons fresh Vertissimo chervil leaves, rinsed, dried, and finely chopped
  • 1/8 teaspoon salt, or to taste
  • Freshly ground black pepper, to taste
  • 2 slices toast, for serving

Directions

  1. Prepare washed chervil on a clean cutting board, removing tough stems before chopping.
  2. Whisk the eggs, milk, salt, and pepper in a bowl.
  3. Melt the butter in a nonstick skillet over medium-low heat. Pour in the egg mixture.
  4. Gently stir with a spatula, drawing the cooked edges toward the center. Cook until the eggs are set with no visible liquid remaining and reach 160°F, checked with a food thermometer.
  5. Remove from the heat and gently fold in most of the chopped chervil. Serve immediately on warm plates with toast and the remaining chervil sprinkled on top.

Kitchen Tip: Add chervil at the end to preserve its delicate flavor. Use low, gentle heat and stop cooking as soon as the eggs are safely set to avoid drying them out.

Storage: Refrigerate leftovers within 2 hours, or 1 hour above 90°F, in a covered container. Use within 3–4 days and reheat to 165°F.

Allergy Note: Contains eggs and dairy; toast may contain wheat or other allergens. Choose ingredients appropriate for your needs.
