Eggplant Black Beauty is a time-honored Italian heirloom variety and one of the most widely grown and recognized eggplants in American gardens. Prized for its exceptional productivity, spineless stems, and stunning deep purple-black glossy fruit, Black Beauty delivers heavy yields of large, bell-shaped to oval fruit measuring 5–7 inches in diameter. The deep purple, nearly black glossy skin signals peak ripeness and optimal flavor development. Plants are robust and upright, producing fruit with medium to thick skin that provides excellent structural integrity for cooking, grilling, and storage while maintaining the tender, creamy flesh that defines superior eggplant quality. The spineless characteristic eliminates the handling challenges of traditional spiny varieties, making harvest and kitchen prep significantly more convenient. Ready to harvest in approximately 70–74 days. A true garden classic that rewards consistent care with prolific seasonal yields.

Germination Rate: 85%. Test Date: 8/25. OSI.

Why Choose Eggplant Black Beauty?

  • Classic Italian Heirloom: One of the oldest and most established eggplant varieties in American home gardens — prized for over a century for consistent flavor and prolific production.
  • Spineless Stems: No sharp spines on stems or calyxes — significantly easier and safer to harvest and handle than traditional spiny eggplant varieties.
  • Large, Beautiful Fruit: Deep purple-black, glossy, bell-shaped to oval fruit measuring 5–7 inches — exceptional visual presentation at farmers markets, CSA boxes, and the dinner table.
  • Heavy Yields: Prolific producer of large fruit throughout the growing season — each plant delivers multiple large fruits per harvest cycle.
  • Versatile Culinary Uses: The large size and thick flesh make Black Beauty ideal for grilling, roasting, baking, frying, stuffing, and making eggplant Parmesan.
  • 70–74 Day Maturity: Reliable mid-season harvest timing for consistent season planning.
  • Heirloom & Open-Pollinated: Save seeds year after year for a self-sustaining garden.
  • Non-GMO: DNA structure never altered from natural traditional breeding methods.

Planting Tips for Success

  • Sunlight: Full sun — at least 6–8 hours per day. Eggplant is one of the most heat-loving vegetables and demands maximum warmth and light for vigorous production.
  • Soil: Rich, well-drained soil with a pH of 5.5–6.5. Amend generously with compost before planting. Eggplant is a heavy feeder — good soil preparation is essential for large fruit development.
  • Planting: Start seeds indoors 8–10 weeks before last frost — eggplant requires a long growing season and should never be direct-sown outdoors in most climates. Transplant outdoors only after soil temps reach 60°F+ and all frost risk has passed. Cold soil stunts eggplant severely.
  • Spacing: Space plants 18–24 inches apart in rows 24–36 inches apart. Adequate spacing improves air circulation and reduces disease pressure.
  • Watering: Water deeply and consistently — 1–2 inches per week. Irregular watering causes bitter flavor and soft spots in fruit. Mulch heavily to retain soil moisture and warmth.
  • Fertilizing: Apply a balanced fertilizer at transplant. Side-dress with a low-nitrogen, high-potassium and phosphorus formula once plants begin flowering to support fruit set and development over foliage.
  • Support: Stake plants early — the large, heavy fruit causes branches to droop or break without support. Use bamboo stakes or cages at transplant time before fruit load develops.
  • Harvesting: Harvest when skin is deeply colored, glossy, and firm — press the skin; if it springs back, the fruit is ready. Overripe eggplant turns dull, soft, and bitter. Harvest with pruners, leaving 1–2 inches of stem. Regular harvesting encourages continued fruit production.

Cooking Methods & Uses

  • Eggplant Parmesan: The definitive Italian preparation — slice, salt, bread, fry or bake, then layer with marinara and mozzarella. Black Beauty’s large size and thick flesh are ideal for this classic dish.
  • Grilled: Slice ½ inch thick, brush with olive oil and seasoning, and grill over medium-high heat 4–5 minutes per side until grill marks appear and flesh is tender and smoky.
  • Roasted: Cube and roast at 425°F with olive oil, garlic, and za’atar for 25–30 minutes until caramelized — excellent in grain bowls, pasta, and mezze spreads.
  • Baba Ganoush: Char whole eggplant directly over a gas flame or under a broiler until blackened and collapsed, then scoop flesh and blend with tahini, lemon, and garlic for the classic Middle Eastern dip.
  • Stuffed Eggplant: Halve, scoop out flesh, and stuff with seasoned ground meat, rice, tomatoes, and herbs. Bake at 375°F for 30–35 minutes for a hearty main dish.
  • Stir-Fry: Cube and stir-fry in a hot wok with soy sauce, garlic, ginger, and chili for a classic Sichuan-style eggplant dish (Yu Xiang Qie Zi).

Important Disclosures

  • Variety Disclaimer: Harvest eggplant before it turns dull or soft — overripe fruit becomes bitter and seedy. The skin-press test (springs back = ready) is the most reliable ripeness indicator. Eggplant is highly sensitive to cold soil and temperatures — do not rush transplanting. Results may vary by growing conditions and climate.
  • Seed Storage: Store seeds in a cool, dry location. Properly stored eggplant seeds maintain viability for 4–6 years.
  • Planting Zones: Grown as a warm-season annual in all USDA zones. Best in Zones 5–11; outstanding in Zones 8–11 with long, hot growing seasons. In Zones 9–11, plant in early spring (February–March) for a summer harvest; a second planting in July–August can produce a fall crop.
