Lemon-Herb Roasted Rainbow Beets

Use harvested roots from your Rainbow Mix plants, not the planting seeds in the packet. Serves 4. Prep time: 20 minutes. Cooking time: 35 to 45 minutes.

Ingredients

  • 2 pounds harvested mixed-color beet roots
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1 teaspoon finely grated lemon zest
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • Lemon wedges, optional, for serving

Directions

  1. Heat oven to 400°F. Trim beet tops, reserving greens for another dish if desired. Scrub the roots under running water, peel and cut into roughly 1-inch wedges or chunks.
  2. Toss beets with olive oil, salt and pepper. To preserve the lighter colors, toss red beets separately and place them on a separate baking sheet or in a separate section without mixing juices.
  3. Spread in a single layer on rimmed baking sheets. Roast for 35 to 45 minutes, turning halfway through, until tender when pierced with a fork. Smaller pieces may finish sooner.
  4. Transfer to a serving platter. Drizzle with lemon juice, add lemon zest and sprinkle with parsley. Arrange the red pieces last if you want to limit color bleeding.
  5. Serve warm or chilled with lemon wedges if desired. Chioggia's raw pink-and-white rings may fade during cooking.

Options and Storage
