Why Choose Squash Summer Zephyr?

  • Distinctive Two-Tone Color: Yellow fruit with green blossom ends adds visual interest to garden harvests and vegetable platters.
  • Tender Young Squash: Harvest while the skin is delicate and seeds are immature for easy preparation and appealing texture.
  • Mild, Sweet Flavor: Pair with lemon, basil, garlic, or other garden vegetables without overpowering the dish.
  • Productive Hybrid: Warmth, fertility, consistent watering, and regular picking support continued harvests.
  • Versatile Cooking: Grill, roast, or sauté young fruit for quick side dishes.
  • Non-GMO Hybrid Seeds: This is a hybrid, not an heirloom. Saved seed may not produce plants matching the original variety.

Planting Tips for Success

  • Timing: Direct sow after frost danger has passed and soil has warmed. If starting indoors, transplant young seedlings carefully without disturbing their roots.
  • Sunlight: Choose full sun with at least 6–8 hours of direct light daily.
  • Soil: Use fertile, well-drained soil amended with finished compost. Avoid waterlogged areas.
  • Sowing: Plant about 1 inch deep and maintain even moisture during establishment.
  • Spacing: Allow 2–3 feet between plants, leaving enough room for broad leaves, airflow, and harvesting.
  • Watering: Water consistently at soil level, especially during flowering and fruit development. Mulch established plants without covering the crown.
  • Fertilizing: Follow soil-test guidance and fertilizer label directions. Excess nitrogen can favor foliage over fruit.
  • Support and Pollination: Bush-type plants generally do not require a trellis. Allow pollinators access to flowers; early male flowers can appear before female flowers.
  • Harvesting: Check frequently and cut young fruit while the skin is tender. Regular picking prevents oversized fruit from accumulating.
  • Garden Care: Monitor for squash bugs, vine borers, and leaf disease. No specific disease resistance is claimed here; routine crop care remains important.

Lemon-Basil Grilled Zephyr Squash

Use young harvested Zephyr squash for a colorful, lightly charred side dish. The planting seeds in this packet are not recipe ingredients. Serves 4. Preparation: 10 minutes. Cooking: 6–10 minutes.

Ingredients

  • 1 1/2 pounds young Zephyr squash
  • 2 tablespoons olive oil, divided
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1 teaspoon finely grated lemon zest
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons thinly sliced fresh basil
  • Lemon wedges, optional, for serving

Directions

  1. Heat a clean grill to medium-high, approximately 400–425°F. A stovetop grill pan also works.
  2. Wash squash under running water, dry well, and trim the ends. Halve small squash lengthwise. Cut thicker fruit into lengthwise planks about 1/2 inch thick.
  3. Brush with 1 1/2 tablespoons olive oil and season with salt and pepper.
  4. Grill for 3–5 minutes per side, turning once, until lightly marked and crisp-tender. Adjust time for thickness and grill heat.
  5. Whisk the remaining 1/2 tablespoon oil with lemon zest and lemon juice. Drizzle over the warm squash.
  6. Scatter basil over the top and serve immediately with optional lemon wedges.

Serving and Storage

Serve with grilled dishes, cooked grains, or beans. Add basil after grilling to keep its fresh flavor. Refrigerate leftovers within 2 hours in a covered container, use within 3–4 days, and reheat to 165°F before serving.
