Use harvested Astro arugula leaves, not the seeds in this packet. Serves 4. Prep: 15 minutes.

Ingredients:

  • 4 cups harvested Astro arugula leaves, washed and dried
  • 1 cup cherry tomatoes, halved
  • ¼ cup shaved Parmesan cheese
  • ¼ cup pine nuts, lightly toasted
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon lemon zest
  • ¼ teaspoon salt, or to taste
  • Freshly ground black pepper, to taste

Directions:

  1. Wash the harvested arugula and tomatoes thoroughly. Dry the leaves so the dressing clings. Toast pine nuts in a dry skillet over medium-low heat for 2–3 minutes, stirring often, until golden; cool.
  2. Whisk olive oil, lemon juice, lemon zest, salt, and pepper in a small bowl.
