Why Choose Beefsteak Rainbow Mix Tomato?

  • Colorful Possibilities: Discover a range of natural tomato colors for eye-catching fresh plates; every packet and harvest may differ.
  • Varied Flavors: Enjoy differences in sweetness, acidity, and richness among the mix's tomatoes.
  • Meaty Beefsteak Texture: Large slicing tomatoes make satisfying additions to sandwiches, salads, and cooked dishes.
  • Mixed Growth Habits: Determinate plants tend toward a more concentrated harvest, while indeterminate vines can continue producing under suitable conditions.
  • Heirloom and Open-Pollinated: Save seed from individually selected, suitably isolated plants if maintaining a particular variety; saved seed does not recreate the original packet's blend.

Planting Tips for Success

  • Start Indoors: Sow approximately 6–8 weeks before your planned transplant date, about 1/4 inch deep in seed-starting mix. Keep evenly moist and provide bright light after emergence.
  • Harden Off: Gradually acclimate seedlings to outdoor conditions before transplanting after frost danger passes and soil warms.
  • Sun and Soil: Choose 6–8 hours of direct sunlight and fertile, well-drained soil amended with finished compost.
  • Spacing: Allow approximately 24–36 inches between supported plants and adequate row space for airflow and harvest access.
  • Support: Install sturdy cages, stakes, or trellises early. Allow room for vigorous indeterminate plants and support determinate plants as fruit develops.
  • Identify Plants: Label individual plants as their characteristics become apparent. A mix does not mean each plant produces multiple ripe fruit colors.
  • Water and Mulch: Water consistently at soil level and mulch after soil warms to moderate moisture swings and reduce soil splash.
  • Fertilizing: Follow soil-test recommendations and fertilizer label directions. Avoid excessive nitrogen that favors foliage over fruit.
  • Pruning: Train plants to their support and remove damaged foliage as needed. Avoid heavy pruning of determinate plants and retain healthy leaves to shade fruit.
  • Harvest: Pick as each fruit reaches its characteristic ripe color and yields slightly to gentle pressure. Timing and productivity vary among plants.

Rainbow Beefsteak Tomato Salad with Feta and Basil

Use ripe, harvested tomatoes in whichever colors your garden provides, not the planting seeds. Serves 4 as a side. Preparation: 15 minutes. No cooking required.

Ingredients

  • 2 pounds ripe Beefsteak Rainbow Mix tomatoes, washed and cored
  • 1/4 small red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh basil leaves, washed, dried, and torn
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon freshly ground black pepper

Directions

  1. Slice some tomatoes approximately 1/2 inch thick and cut the rest into wedges. Arrange on a serving platter.
  2. Scatter the red onion over the tomatoes.
  3. Whisk olive oil, red wine vinegar, salt, and pepper in a small bowl.
  4. Drizzle dressing over the tomatoes. Top with crumbled feta and torn basil.
  5. Let stand for about 5 minutes to mingle flavors, then serve with the platter juices spooned over each portion.

Serving and Storage

Serve with grilled vegetables, chicken, or toasted bread. Add the feta just before serving for the freshest appearance. Refrigerate leftovers in a covered container within 2 hours, or within 1 hour above 90°F. Enjoy within 1–2 days for best texture. Contains milk from feta; check labels.
