Why Choose Rose Beefsteak Tomato?
- Rich Flavor: Enjoy a full-flavored slicing tomato in simple dishes that let ripe fruit shine.
- Large Pink Fruit: Deep pink beefsteaks can exceed 10 ounces, providing generous slices for sandwiches and tomato plates.
- Meaty Texture: Substantial flesh works well in salads, fresh sauces, and lightly cooked pasta dishes.
- Indeterminate Growth: Supported vines can continue growing and setting fruit while conditions remain suitable.
- Heirloom and Open-Pollinated: Save seed from healthy, suitably isolated plants when maintaining varietal characteristics.
Planting Tips for Success
- Starting Seeds: Sow indoors approximately 6–8 weeks before your planned transplant date, about 1/4 inch deep in seed-starting mix. Keep evenly moist and provide strong light after emergence.
- Transplanting: Harden seedlings off gradually. Move outdoors after frost danger has passed and soil and nights have warmed.
- Sun and Soil: Provide 6–8 hours of direct sunlight and fertile, well-drained soil amended with finished compost.
- Spacing: Space supported plants approximately 24–36 inches apart, leaving ample room between rows for air movement and harvest access.
- Strong Support: Install tall cages, stakes, or a trellis early. Secure growing stems loosely and support branches carrying heavy fruit.
- Consistent Water: Water deeply at soil level and mulch after soil warms. Avoid sharp moisture swings, which can contribute to fruit splitting.
- Fertilizing: Follow soil-test recommendations and fertilizer label directions. Avoid excess nitrogen that favors leafy growth over fruit.
- Plant Care: Train vines to their support, remove damaged foliage as needed, and inspect regularly for pests and disease. Retain enough healthy foliage to shade fruit.
- Harvest: The existing listing estimates approximately 80 days from transplant; actual timing varies. Pick when fruit reaches deep pink color and yields slightly to gentle pressure.

Rose Tomato-Basil Pasta
Use ripe, harvested Rose tomatoes for this fresh, lightly cooked pasta, not the planting seeds. Serves 4. Preparation: 15 minutes. Cooking: approximately 15 minutes.
Ingredients
- 12 ounces dry penne pasta
- 1 1/2 pounds ripe Rose tomatoes, washed, cored, and cut into bite-size chunks
- 3 tablespoons olive oil
- 3 garlic cloves, minced
- 1/2 teaspoon salt, plus additional to taste
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup loosely packed fresh basil leaves, washed, dried, and torn
- 1/3 cup finely grated Parmesan cheese, plus more for serving
- Up to 1/2 cup reserved pasta cooking water, as needed
Directions
- Cook penne according to package directions until al dente. Before draining, reserve 1/2 cup cooking water.
- While pasta cooks, warm olive oil in a large skillet over medium-low heat. Add garlic and cook for 30–60 seconds until fragrant without browning.
- Add tomatoes, salt, and pepper. Increase heat to medium and cook gently for 4–6 minutes, stirring occasionally, until tomatoes release juice but still retain some shape.
- Add drained pasta and toss. Add reserved cooking water a tablespoon at a time if needed to help the juices coat the pasta.
- Remove from heat. Fold in basil and Parmesan, taste, and adjust seasoning. Serve promptly with extra Parmesan if desired.
Serving and Storage
Serve with a green salad or toasted bread. Refrigerate leftovers in a covered container within 2 hours, or within 1 hour when temperatures exceed 90°F. Use refrigerated leftovers within 3–4 days and reheat thoroughly. Contains wheat and milk when made with standard pasta and Parmesan; check ingredient labels.
