Why Choose White Satin Carrots?

  • Pure-white roots: An eye-catching alternative to orange carrots for vegetable trays and cooked dishes.
  • Crisp and juicy: Fresh roots add texture to salads, slaws, and snack plates.
  • Long cylindrical shape: Roots average 8 to 9 inches when given suitable soil and growing conditions.
  • Easy-to-handle pellets: The coating makes individual seeds easier to see and space when sowing.
  • Four packet sizes: Choose a seed quantity suited to a small planting or successive sowings.

What Are Pelleted Seeds?

Pelleted seeds have a coating that creates a more uniform shape and improves visibility during planting. Keep the seedbed evenly moist while the coating softens and seedlings emerge. Learn more about pelleted seeds.

Planting Tips for Success

  • Plan for cool weather: Direct sow in spring or late summer for fall harvests, adjusting to local frost dates and seasonal conditions.
  • Prepare deep, loose soil: Remove stones and hard clumps so long roots can develop. Choose a deep container if planting in pots.
  • Sow shallowly: Plant approximately 1/4 inch deep in fine soil. Maintain consistent surface moisture while pellets break down and seedlings emerge.
  • Thin carefully: Allow approximately 2 to 3 inches between plants without disturbing neighboring roots. Packet size refers to seed quantity, not plant spacing.
  • Provide sunlight and water: Choose a sunny site and water evenly without leaving the soil waterlogged.
  • Protect shoulders: Gently cover exposed root shoulders with loose soil as plants develop to help reduce greening.
  • Feed appropriately: Follow soil-test or fertilizer-label guidance. Avoid excessive nitrogen and fresh manure. Carrots do not need stakes or cages.
  • Harvest gently: Loosen soil before lifting long roots rather than relying on pulling the tops alone.

Lemon-Garlic Roasted White Satin Carrots

Use harvested White Satin carrots for this simple garden-to-table side dish. Ingredients are harvested vegetables, not seed-packet contents. Serves 4. Prep: 15 minutes. Cook: 25 to 35 minutes.

Ingredients

  • 1 1/2 pounds harvested White Satin carrots
  • 2 tablespoons olive oil
  • 2 garlic cloves, finely minced
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon finely grated lemon zest
  • 2 tablespoons chopped flat-leaf parsley

Directions

  1. Heat the oven to 400°F. Wash carrots under running water, trim, and peel if desired.
  2. Halve lengthwise, quartering thick carrots so pieces have similar thickness. Cut long pieces to fit the pan if needed.
  3. Toss with olive oil, salt, and pepper. Spread in a single layer on a rimmed baking sheet and roast for 20 minutes, turning halfway through.
  4. Add the minced garlic, toss carefully, and roast another 5 to 15 minutes, until fork-tender. Watch the garlic and cover loosely if it browns too quickly.
  5. Finish with lemon juice, lemon zest, and parsley. Taste and adjust seasoning before serving.

Recipe Tips and Storage

Check thinner carrots early and allow thicker pieces more cooking time. For a dairy option, toss with a small pat of butter just before serving. Refrigerate leftovers in a covered container within 2 hours, or within 1 hour above 90°F, and use within 3 to 4 days. This is a cooked side dish, not a tested canning recipe.
