Why Choose Mokum Carrots?

  • Sweet fresh flavor: A useful choice for enjoying carrots straight from the garden after washing.
  • Slender orange roots: Pencil-shaped carrots are convenient for fresh slices and quick cooking.
  • Tender texture: Handle harvested roots gently because their delicate texture can make them brittle.
  • Easy-to-space pellets: Coated seeds are easier to see and handle during sowing.
  • Four packet sizes: Choose the seed quantity suited to your bed or succession-planting plan.

What Are Pelleted Seeds?

Pelleted seeds have a coating that creates a more uniform shape and makes individual seeds easier to handle. Keep the coating and surrounding soil evenly moist while seedlings emerge. Learn more about pelleted seeds.

Planting Tips for Success

  • Plant for your season: Direct sow in spring or late summer for fall harvests, adjusting to local frost dates. Cool conditions generally favor carrot quality.
  • Prepare loose soil: Remove stones and hard clumps and loosen soil deeply enough for straight roots. Choose a deep container if growing in pots.
  • Sow shallowly: Plant approximately 1/4 inch deep in fine soil. Maintain consistent surface moisture while pellets soften and seedlings emerge.
  • Thin carefully: Allow approximately 2 to 3 inches between plants without disturbing adjacent roots. Packet size refers to seed quantity, not spacing.
  • Provide sunlight and moisture: Choose a sunny site and water consistently without waterlogging the bed.
  • Feed moderately: Follow soil-test or fertilizer-label guidance. Avoid excessive nitrogen and fresh manure. Carrots do not require stakes or cages.
  • Harvest gently: Check root size during the growing season and loosen soil before lifting. Handle tender roots carefully to reduce breakage.

Honey-Butter Glazed Mokum Carrots

Use harvested Mokum carrots for a quick skillet side dish. Ingredients are harvested produce, not seed-packet contents. Serves 4. Prep: 10 minutes. Cook: 12 to 18 minutes.

Ingredients

  • 1 pound harvested Mokum carrots
  • 1/3 cup water, plus more if needed
  • 1 tablespoon unsalted butter
  • 1 tablespoon honey
  • 1/4 teaspoon salt, or to taste
  • 1/8 teaspoon black pepper
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon chopped flat-leaf parsley

Directions

  1. Wash carrots under running water and trim. Peel if desired. Leave very slender carrots whole and halve thicker ones lengthwise for even cooking.
  2. Place carrots, water, and salt in a large skillet. Bring to a simmer, cover, and cook over medium-low heat for 6 to 10 minutes, until nearly tender. Add a splash of water if the pan dries out.
  3. Uncover and let most remaining water evaporate. Add butter, honey, and pepper.
  4. Cook gently for 3 to 5 minutes, turning carefully, until tender and lightly glazed. Lower the heat if the glaze begins to darken too quickly.
  5. Finish with lemon juice and parsley. Taste and adjust seasoning before serving.

Recipe Tips and Storage

Use olive oil instead of butter and maple syrup instead of honey if preferred. Thin carrots cook quickly, so check them early. Refrigerate leftovers in a covered container within 2 hours, or within 1 hour above 90°F, and use within 3 to 4 days. This is a cooked side dish, not a tested canning recipe.
