Why Choose Deep Purple Carrots?

  • Purple to the core: Deeply colored roots make a striking addition to vegetable boards and garden-to-table meals.
  • Long, tapered roots: Imperator-type carrots benefit from deep, loose soil that lets their roots develop.
  • Kitchen versatility: Enjoy their earthy flavor raw, roasted, or freshly juiced.
  • Easy-to-space pellets: The coating makes individual seeds easier to see and handle at planting.
  • Four packet sizes: Choose the seed quantity that fits your garden without changing the plant-spacing requirements.

What Are Pelleted Seeds?

Pelleted seeds have a coating that creates a more uniform shape and improves visibility during sowing. Keep the seedbed evenly moist while the coating breaks down and seedlings emerge. Learn more about pelleted seeds.

Planting Tips for Success

  • Choose cool-season timing: Direct sow in spring or late summer for fall harvests, adjusting dates to your local climate.
  • Prepare deep soil: Loosen the bed thoroughly and remove stones and hard clumps. Use a deep container if growing outside a garden bed.
  • Sow shallowly: Plant approximately 1/4 inch deep in fine soil. Keep the surface consistently moist, not waterlogged, until seedlings emerge.
  • Thin carefully: Allow approximately 2 to 3 inches between plants so roots have room to develop. Avoid disturbing neighboring seedlings.
  • Provide sunlight: Choose a sunny site for strong carrot growth, rather than the pepper-growing guidance previously in this listing.
  • Water consistently: Maintain even moisture and weed gently to reduce competition and avoid damaging roots.
  • Feed appropriately: Use soil-test or fertilizer-label guidance. Avoid excessive nitrogen and fresh manure that can encourage leafy growth or misshapen roots. Carrots do not require stakes or cages.
  • Harvest gently: Check root development near the expected maturity date and loosen the soil before lifting long roots.

Garlic-Roasted Deep Purple Carrots

Use harvested Deep Purple carrots for this colorful side dish. Recipe ingredients are harvested vegetables, not the contents of the seed packet. Serves 4. Prep: 15 minutes. Cooking: 25 to 35 minutes.

Ingredients

  • 1 1/2 pounds harvested Deep Purple carrots
  • 2 tablespoons olive oil
  • 2 garlic cloves, finely minced
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped flat-leaf parsley

Directions

  1. Heat the oven to 400°F. Wash carrots under running water, trim the tops, and peel if desired.
  2. Halve carrots lengthwise, quartering thick ones so pieces have similar thickness. Cut extra-long pieces to fit the pan if needed.
  3. Toss with olive oil, salt, and pepper. Spread in a single layer on a rimmed baking sheet.
  4. Roast for 20 minutes, turn, then sprinkle with minced garlic and toss carefully. Roast another 5 to 15 minutes, until fork-tender. If the garlic browns too quickly, cover loosely.
  5. Finish with lemon juice and chopped parsley. Taste and adjust seasoning before serving.

Recipe Tips and Storage

Purple carrot juice may stain hands, towels, and porous cutting boards. Check thinner carrots early to avoid overcooking. Refrigerate leftovers in a covered container within 2 hours, or within 1 hour above 90°F, and use within 3 to 4 days. This is a fresh cooked dish, not a tested canning recipe.
