Butterhead Bibb Lettuce Cups with Chickpeas and Garden Vegetables
Turn harvested Bibb lettuce into tender cups filled with lemony chickpeas, cucumber and tomatoes. This recipe uses harvested lettuce leaves, not planting seeds.
Serves: 4 as a light meal or appetizer. Prep: 15 minutes. Cooking: None when using cooked canned chickpeas.
Ingredients
- 12 large harvested Butterhead Bibb lettuce leaves
- 1 can (15 ounces) cooked chickpeas, drained and rinsed
- 1 cup diced cucumber
- 1 cup diced tomatoes
- 2 tablespoons chopped fresh parsley
- 2 tablespoons olive oil
- 1½ tablespoons fresh lemon juice
- ½ teaspoon dried oregano
- ¼ teaspoon salt, or to taste
- Freshly ground black pepper, to taste
- Lemon wedges for serving, optional
Directions
- Wash hands and rinse the harvested lettuce, cucumber, tomatoes and parsley under running water. Do not use soap on produce. Dry the lettuce gently and thoroughly.
- Drain and rinse the cooked chickpeas. Mash about one-third lightly with a fork so the filling holds together while retaining texture.
- Combine chickpeas, cucumber, tomatoes and parsley in a bowl.
- Whisk olive oil, lemon juice, oregano, salt and pepper. Toss with the chickpea mixture.
- Arrange Bibb leaves on a platter. Double up small leaves if needed, then divide the filling among the cups.
- Serve immediately with lemon wedges if desired.
Options: Add crumbled feta or diced avocado. For smaller lettuce leaves, serve the mixture as a chopped salad instead of cups.
Storage: Refrigerate leaves and filling separately within 2 hours. Use the prepared filling within 3–4 days and the washed leaves within 1–2 days for best quality. Assemble just before serving.
