Leek Giant Musselburgh is a classic Scottish heirloom leek renowned for its exceptional cold hardiness, impressive size, and mild, sweet onion flavor. Developed in Musselburgh, Scotland — one of Britain’s oldest leek-growing regions — this time-tested variety has been a staple of European kitchen gardens for well over 150 years. These impressive plants develop thick, tender white shanks measuring 2–3 inches in diameter and 9–15 inches in length, topped with sturdy medium dark blue-green leaves. The mild, sweet flavor is far gentler than onions, making Giant Musselburgh a versatile culinary workhorse from autumn soups and vichyssoise to winter braises and gratins. Matures in approximately 130 days. Note: These seeds are treated to improve germination performance.

Germination Rate: 94%. Test Date: 5/26. TLM.

Why Choose Giant Musselburgh Leek?

  • Exceptional Cold Hardiness: One of the hardiest leek varieties available — withstands heavy frost and performs in USDA Zones 3–11, making it a true four-season garden plant.
  • Impressive Size: Thick 2–3 inch diameter shanks, 9–15 inches long — among the largest heirloom leek varieties, producing substantial harvests per plant.
  • Mild, Sweet Flavor: Far gentler and sweeter than onions — versatile enough for raw use in salads or as the aromatic base in soups, stocks, and braises.
  • Scottish Heirloom Heritage: 150+ year history from Musselburgh, Scotland — a beloved staple of British and European kitchen gardens.
  • Treated Seeds: Seed treatment improves germination consistency and seedling vigor compared to untreated leek seed.
  • Heirloom & Open-Pollinated: Save seeds year after year for a self-sustaining garden.
  • Non-GMO: DNA structure never altered from natural traditional breeding methods.

Planting Tips for Success

  • Sunlight: Full sun to partial shade — at least 6 hours per day. Tolerates light shade better than most alliums.
  • Soil: Deep, fertile, well-drained soil with a pH of 6.0–7.0. Leeks are heavy feeders — amend generously with compost before planting.
  • Planting: Start seeds indoors 10–12 weeks before transplanting. Sow ¼ inch deep. Transplant outdoors in early spring or late summer for a fall/winter harvest. Direct sowing is possible but indoor starting produces best results.
  • Transplanting & Blanching: Transplant seedlings into 6-inch deep holes or trenches — do not fill in immediately. Gradually mound soil around shanks as they grow to blanch (whiten) the edible portion and extend shank length.
  • Spacing: Space plants 6 inches apart in rows 12–15 inches apart.
  • Watering: Keep consistently moist — leeks are shallow-rooted and drought-sensitive. Water at the base to prevent soil from washing into the leaf folds.
  • Fertilizing: Apply a nitrogen-rich fertilizer at planting and side-dress monthly to support lush, vigorous growth through the long 130-day season.
  • Harvesting: Ready in approximately 130 days. Harvest when shanks reach ¾–1 inch diameter minimum. Loosen soil with a fork before pulling to avoid snapping the shank. Giant Musselburgh is extremely frost-hardy — harvest can continue well into winter in Zones 5+.

Cooking Methods & Uses

  • Leek & Potato Soup / Vichyssoise: The classic use — simmer sliced leeks with potatoes in broth, blend smooth, and finish with cream for the iconic French cold soup or warm leek and potato.
  • Braised Leeks: Halve lengthwise and braise in butter and white wine until silky and caramelized — a simple, elegant French side dish.
  • Cock-a-Leekie: The traditional Scottish chicken and leek soup — honoring this variety’s Musselburgh heritage.
  • Leek Gratin: Layer blanched leeks in a baking dish with béchamel and Gruyère, then bake until golden and bubbling.
  • Quiche & Tart: Sauté and fold into egg custard with Gruyère or goat cheese for a leek tart or quiche Lorraine variation.
  • Stocks & Broths: Use the dark green tops (often discarded) in vegetable and chicken stocks for a sweet, aromatic depth.
