Burdock Chiko is a nutritious, medicinal Asian specialty prized for its long, slender roots and versatile culinary applications. A great season-extension offering for fall, winter, and spring harvest and storage. Can be overwintered in soil, much the same as parsnips. Easier to grow than both carrots and parsnips, with faster germination and good weed competition. Delicious in hearty soups and bean stews. Roots are long, slender, and light brown — growing to 1–2 feet long and about 1 inch thick. Harvest in approximately 120–150 days.
