Parsnip All American is a high-yielding heirloom variety prized for its tender, mildly sweet white flesh. These parsnips develop smooth, tapered roots approximately 10–12 inches long and 3 inches in diameter, with flat tops that make them easy to harvest. Known for their delicate flavor and excellent frost resistance — flavor actually improves after a light frost — All American is a dependable cool-season root crop for spring and fall gardens. A proven performer that rewards patient gardeners with a generous harvest of premium, kitchen-ready parsnips.

Why Choose All American Parsnip?

  • Large, Smooth Roots: Produces 10–12 inch tapered roots with smooth white skin and tender, mildly sweet flesh.
  • Frost-Resistant: Cold tolerance actually enhances flavor — roots left in the ground after frost convert starches to sugars for a sweeter harvest.
  • High Yields: Reliable, abundant production season after season from vigorous heirloom genetics.
  • Heirloom & Open-Pollinated: Passed down through generations — save seeds year after year for a self-sustaining garden.
  • Non-GMO Seeds: Plants whose DNA has not been altered in ways that do not occur naturally through traditional breeding methods.

Planting Tips for Success

  • Sunlight: Prefers full sun — at least 6 hours per day for best root development.
  • Soil: Requires deep, loose, well-drained soil free of rocks and clumps. Heavy or rocky soil causes forked, stunted roots. Amend with compost and loosen to at least 12 inches deep. Soil pH of 6.0–6.8 is ideal.
  • Planting: Direct sow in early spring as soon as soil can be worked, or in late summer for a fall/winter crop. Parsnip seeds are slow to germinate — be patient (2–3 weeks is normal). Sow fresh seed each season for best germination.
  • Spacing: Sow seeds ¼–½ inch deep, 1 inch apart; thin to 3–6 inches apart once seedlings emerge. Rows 12–18 inches apart.
  • Support: No support needed — parsnips are a root crop. Keep area weeded, especially in early stages when seedlings are small.
  • Watering: Water consistently and evenly. Irregular watering causes cracked or forked roots. Reduce watering as roots approach maturity.
  • Fertilizing: Work in compost or a balanced fertilizer before planting. Avoid high-nitrogen fertilizers — they encourage leaf growth at the expense of root development.
  • Harvesting: Ready in 100–130 days. Harvest after the first frost for sweetest flavor. Roots can be left in ground through winter in most zones and harvested as needed.

Cooking Methods

  • Roasting: Toss peeled, sliced parsnips with olive oil, salt, and herbs. Roast at 400°F for 25–30 minutes until golden and caramelized — brings out their natural sweetness beautifully.
  • Mashing: Boil until tender and mash with butter, cream, and a pinch of nutmeg for a rich, slightly sweet alternative to mashed potatoes.
  • Soups & Stews: Add diced parsnips to soups, stews, and pot roasts — they add body, sweetness, and a mild earthy depth.
  • Steaming: Steam for 8–10 minutes for a tender side dish — finish with butter and fresh parsley.
  • Frying: Cut into thin strips and fry for parsnip chips — a crispy, naturally sweet snack or garnish.

Important Disclosures

  • Variety Disclaimer: Heirloom varieties may exhibit natural variation in size, color, and maturation. Results may vary based on growing conditions, climate, and gardening practices.
  • Seed Storage: Store seeds in a cool, dry location away from direct sunlight. Refrigeration in an airtight container extends viability. Parsnip seeds have a shorter shelf life than most vegetables — use fresh seed each season for best germination results.
  • Planting Zones: Best suited for USDA Hardiness Zones 3–10 as a cool-season crop. Plant in early spring or late summer for a fall/winter harvest. Parsnips do not perform well in hot summer conditions.
