Herb Celery Cutting Nan Ling 2000 Non-GMO, Heirloom Seeds
Cutting Celery Nan Ling is a leafy Asian heirloom valued for its delicate, sweet celery flavor and easier growing habit than standard celery. Plants produce tender, slender stalks and abundant aromatic leaves, with a compact form that fits comfortably in herb gardens, containers, and smaller growing spaces. The fresh leaves and stalks bring a crisp, savory note to salads, soups, stews, broths, and traditional Chinese dishes. With the look of a cross between chervil and parsley, Nan Ling is both useful in the kitchen and attractive in the garden. Plants mature in approximately 80 days and provide repeated harvests through the growing season. This packet contains 1,000 non-GMO, heirloom seeds.

Growing Directions
- Plan for a Long Season: Nan Ling matures in approximately 80 days. Start seeds indoors or sow outdoors according to local conditions and allow the plants time to establish before harvest.
- Choose the Site: Grow in full sun to partial shade in fertile, moisture-retentive, well-drained soil. Containers work well when they are deep enough for steady root growth and have drainage holes.
- Sow Shallowly: Plant seeds according to the packet directions and cover lightly. Keep the seedbed consistently moist during germination and early growth.
- Thin Carefully: Thin seedlings to provide airflow and room for the compact plants to develop tender stalks and abundant leaves.
- Maintain Moisture: Water regularly and deeply enough to keep the soil evenly moist. Avoid letting plants repeatedly dry out, especially during hot weather.
- Feed for Leaf Growth: Work compost into the soil before planting and apply a balanced fertilizer according to label directions when plants need additional nutrition.
- Harvest Gradually: Pick outer leaves and tender stalks as needed, leaving the central growth point intact for continued production.
- Protect from Heat Stress: Provide afternoon shade in especially hot climates and use mulch to help moderate soil temperature and conserve moisture.
- Container Care: Container-grown plants may need more frequent watering than plants in the ground. Check the soil regularly and harvest often to encourage fresh growth.

Garlic-Ginger Nan Ling Cutting Celery and Tofu Stir-Fry
Enjoy freshly harvested Nan Ling stalks and aromatic leaves with golden tofu and a simple savory sauce. This recipe uses produce harvested from mature plants, not the planting seeds in the packet.
Servings: 4. Prep time: 15 minutes. Cook time: 15 minutes.
Ingredients
- 2 cups fresh Nan Ling cutting celery stalks, rinsed and cut into 1-inch pieces
- 1 loosely packed cup fresh Nan Ling celery leaves, rinsed and roughly chopped
- 1 package (14 ounces) firm tofu, drained, patted dry, and cut into 3/4-inch cubes
- 2 tablespoons neutral cooking oil, divided
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, cut into thin matchsticks
- 2 tablespoons reduced-sodium soy sauce
- 3 tablespoons water
- 1 teaspoon cornstarch
- 1 teaspoon toasted sesame oil
- Cooked rice, for serving
Directions
- Prepare the washed celery on a clean cutting board, keeping the stalks and leaves separate. Pat the tofu thoroughly dry to reduce splattering.
- Mix the soy sauce, water, cornstarch, and sesame oil in a small bowl.
- Heat 1 tablespoon neutral oil in a large skillet over medium-high heat. Add the tofu in a single layer and cook for 7–9 minutes, turning carefully until golden on several sides. Transfer to a plate.
- Add the remaining tablespoon of oil to the skillet. Stir-fry the celery stalks for 2–3 minutes, until crisp-tender.
- Add the garlic and ginger and stir for 30 seconds. Return the tofu to the pan.
- Stir the sauce again, pour it into the skillet, and toss for 1–2 minutes until lightly thickened. Fold in the celery leaves just until wilted.
- Serve hot with rice. Add a splash of water if the sauce becomes too thick.
Kitchen Tip: Add the leafy tops at the end to retain their fresh flavor. For a little heat, stir in a pinch of crushed red pepper with the garlic.
Storage: Refrigerate leftovers in shallow covered containers within 2 hours, or 1 hour above 90°F. Use within 3–4 days and reheat to 165°F.
Allergy Note: Contains celery, soy, and sesame; most soy sauces also contain wheat. Choose ingredients appropriate for your dietary needs.
