Why Choose Scarlet Nantes Carrot?

  • Sweet, mild flavor: A versatile carrot for crunchy snacks, salads, and cooked dishes.
  • Fine texture and small core: Enjoy tender roots with a pleasant bite when harvested at the right size.
  • Cylindrical roots: Smooth orange carrots with blunt tips are convenient to slice and prepare.
  • Approximately 70-day maturity: Plan successive sowings for an extended harvest when local weather permits.
  • Heirloom and open-pollinated: Grow an established variety with traditional garden appeal.
  • Non-GMO seed: A seed choice that is not genetically engineered.

Planting Tips for Success

  • When to sow: Direct sow outdoors about 2–4 weeks before your last spring frost, or time a fall planting to mature in cool weather.
  • Soil: Prepare loose, well-drained soil free of rocks and hard clumps. Incorporate finished compost and avoid fresh manure, which can contribute to misshapen roots.
  • Depth: Sow about 1/4 inch deep, initially about 1/2 inch apart in rows roughly 12 inches apart.
  • Germination: Keep the shallow seedbed consistently moist. The existing listing gives approximately 10–17 days; temperature and moisture can change this timing.
  • Thinning: Thin to 2–3 inches between plants so roots have room to develop. Snip crowded seedlings rather than disturbing neighboring roots.
  • Sunlight: Provide at least 6 hours of direct sun daily.
  • Watering: After establishment, water deeply as needed to maintain even moisture, adjusting for rainfall and soil type.
  • Fertilizing: Follow soil-test recommendations and fertilizer labels. Avoid excess nitrogen, which favors leafy growth.
  • Support: No staking is needed. Keep emerging shoulders lightly covered with soil to reduce greening.
  • Harvest: Check root size around 70 days. Loosen soil carefully before lifting, remove tops for storage, and refrigerate the harvested carrots.

Honey-Thyme Roasted Scarlet Nantes Carrots

Made with harvested Scarlet Nantes carrots, not the seeds in the packet. Serves 4. Prep: 10 minutes. Cooking: 25–35 minutes.

Ingredients

  • 1 pound harvested Scarlet Nantes carrots, washed and trimmed
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon fresh thyme leaves, or 1/3 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon lemon juice, optional

Directions

  1. Heat the oven to 400°F. Line a rimmed baking sheet with parchment suitable for that temperature.
  2. Scrub the carrots under running water and peel if desired. Halve lengthwise; quarter larger carrots so pieces cook evenly.
  3. Toss with olive oil, thyme, salt, and pepper. Spread in a single layer with space between pieces.
  4. Roast for 20 minutes, turning once. Drizzle with honey, toss carefully, and roast another 5–15 minutes until fork-tender and lightly browned. Check frequently after adding honey to avoid scorching.
  5. Add optional lemon juice and serve warm. Cooking time varies with carrot thickness.

Options: Replace honey with maple syrup for a vegan version. Add a pinch of ground cumin for a warm savory accent.

Storage: Refrigerate leftovers in a shallow covered container within 2 hours, or within 1 hour if the temperature is above 90°F. Use within 3–4 days and reheat to 165°F.
