Cilantro Calypso brings fresh, bright herb flavor to your garden and kitchen with abundant leafy growth and a slow-bolting habit that helps extend the harvest window. Snip tender leaves for salsa, pico de gallo, salads, soups, curries, and noodle bowls, enjoying the lively aroma as you chop a handful on your cutting board. Imagine gathering fresh cilantro before dinner, tossing it with ripe tomatoes, onion, and lime, and serving a bowl of colorful garden pico de gallo alongside your favorite meal. Calypso is a useful choice for cooks who want generous foliage and gardeners who appreciate a longer leafy stage before flowering. Slow-bolting does not mean bolt-proof: warm weather and growing conditions still influence flowering, so cool-season planting and successive sowings help keep fresh leaves coming. Grow it in a well-drained bed or container close to the kitchen for convenient harvesting. These non-GMO, heirloom seeds are for planting and growing your own culinary herbs.

Culinary Uses

  • Fresh Salsa: Chop harvested leaves and tender stems into pico de gallo and other fresh salsas for bright herbal flavor.
  • Finishing Herb: Sprinkle over soups, curries, tacos, rice, and noodles near serving time to retain fresh aroma.
  • Salads and Dressings: Combine with vegetables, citrus juice, and oil for fresh salads and herb dressings.
  • Leafy Harvest: Calypso's slow-bolting habit supports an extended leaf harvest when growing conditions are favorable.

Medicinal Uses

None. This product is sold as culinary herb seed, not as a treatment for a medical condition. It is not intended to diagnose, treat, cure, or prevent disease.

Growing Directions

  • Plant in Cool Weather: Cilantro prefers cooler growing conditions. Plan spring or fall sowings around your local climate; heat can encourage bolting even in slow-bolting varieties.
  • Choose the Site: Use well-drained soil in sun, with afternoon shade where warm conditions make that helpful.
  • Sow Seeds: Follow packet directions for sowing depth and spacing. Direct sowing avoids unnecessary disturbance to developing roots.
  • Keep Moist: Maintain consistent moisture during germination without waterlogging the soil.
  • Thin Seedlings: Follow packet spacing so plants have room for leafy growth and good airflow.
  • Successive Sowings: Sow small batches a few weeks apart during suitable weather to maintain a supply of fresh leaves.
  • Feed Sensibly: Prepare soil with compost where needed and apply fertilizer according to its label if additional nutrition is required.
  • Harvest Gently: Snip outer leaves and tender stems, leaving enough foliage for continued growth. Avoid stripping young plants.
  • Container Care: Choose a container with drainage and adequate root room; check moisture more frequently in pots.
  • Flowering and Support: Harvest promptly as flowering begins if leaves are your goal. Taller flower stems may benefit from light support in windy locations.

Fresh Calypso Cilantro Pico de Gallo

This colorful fresh salsa uses harvested cilantro leaves and tender stems, not the seeds in the packet. Serve with tortilla chips, tacos, rice bowls, or grilled vegetables.

Yield: About 2 cups, 4 servings. Prep time: 15 minutes. Rest time: 10 minutes. Cooking: None.

Ingredients

  • 3 medium ripe tomatoes, finely diced, about 1 1/2 cups
  • 1/4 cup finely diced white onion
  • 1/4 cup fresh Calypso cilantro leaves and tender stems, washed, dried, and chopped
  • 1 small jalapeno, seeded and finely minced, optional
  • 1 tablespoon fresh lime juice, plus more to taste
  • 1/4 teaspoon salt, or to taste
  • Tortilla chips, for serving

Directions

  1. Wash hands and rinse tomatoes, cilantro, jalapeno, and lime under running water. Use a clean cutting board and knife.
  2. Dice the tomatoes and onion, then chop cilantro leaves and tender stems. If the tomatoes are very juicy, drain excess liquid.
  3. If using jalapeno, remove the seeds and mince finely. Wear gloves if sensitive to peppers and avoid touching your eyes.
  4. Combine tomatoes, onion, cilantro, and jalapeno in a bowl. Stir in lime juice and salt.
  5. Let stand for 10 minutes, then taste and adjust lime juice or salt. Serve fresh with chips or your favorite savory meal.

Kitchen Tip: Leave out the jalapeno for a mild salsa. For best texture, chop ingredients by hand instead of blending.

Storage: Refrigerate in a covered container within 2 hours, or 1 hour above 90°F. Use within 3 days; fresh salsa softens and releases liquid during storage. This recipe is not suitable for shelf-stable canning.

Allergy Note: Contains cilantro. Check tortilla-chip labels for allergens and select ingredients that suit your household.
