Garlic Chives bring gentle garlic-and-onion flavor to the kitchen in a hardy perennial herb that fits neatly into garden beds, containers, and small herb plantings. Their fresh green leaves are easy to snip for eggs, noodles, dumplings, soups, salads, baked potatoes, and savory sauces, giving everyday meals a garden-grown finish without the intensity of a whole garlic clove. Picture stepping outside to gather a handful, chopping the leaves on your cutting board, and folding them into warm scrambled eggs or a fresh herb spread. Established clumps can provide repeated harvests during active growth, while flowers add ornamental interest and invite pollinators into the garden. Leave enough foliage after harvesting to support continued growth, and divide crowded clumps when needed to keep the planting productive. Whether you want a convenient culinary herb near the kitchen or a useful perennial in a mixed bed, Garlic Chives offer plenty of ways to enjoy your harvest. This packet contains 500 non-GMO, heirloom seeds for planting, not prepared herbs for eating.

Growing Directions

  • Choose the Site: Plant in full sun to partial shade in fertile, well-drained soil with consistent moisture.
  • Start Seeds: Sow indoors 6–8 weeks before the last expected frost, or outdoors after frost danger has passed, following local planting guidance.
  • Sow and Cover Lightly: Follow packet directions for depth. Keep soil evenly moist during germination and early growth.
  • Allow Clump Space: Space seedlings about 8–12 inches apart so clumps have room to develop and airflow reaches the foliage.
  • Water Evenly: Water when the soil surface begins to dry without leaving roots in standing water.
  • Feed Lightly: Mix compost into soil as appropriate and apply fertilizer according to label directions when additional nutrition is needed.
  • Harvest Regularly: Snip leaves near the base, leaving enough foliage for continued growth. Allow young plants to establish before heavy harvesting.
  • Manage Flowering: Leave flowers for pollinator interest or remove spent heads before seeds mature if you want to limit self-sowing.
  • Divide Established Clumps: Divide crowded mature clumps and replant in well-prepared soil.
  • Container Care: Use a pot with drainage holes, monitor moisture, and divide crowded clumps periodically.
  • Support: Provide shelter from strong winds and assess taller flower stems for light support if needed.

Garden Garlic Chive Scrambled Eggs

Enjoy freshly harvested Garlic Chive leaves in a simple savory breakfast. This recipe uses leaves from mature plants, not the planting seeds in the packet.

Servings: 2. Prep time: 5 minutes. Cook time: 5–7 minutes.

Ingredients

  • 4 large eggs
  • 2 tablespoons milk
  • 1 tablespoon butter
  • 2 tablespoons fresh Garlic Chive leaves, rinsed, dried, and finely chopped
  • 1/8 teaspoon salt, or to taste
  • A pinch of black pepper
  • 2 slices toast, for serving

Directions

  1. Prepare washed Garlic Chive leaves on a clean cutting board, cutting them into small pieces.
  2. Whisk eggs, milk, salt, and pepper together.
  3. Melt butter in a nonstick skillet over medium-low heat. Add the egg mixture and stir gently with a spatula, drawing cooked edges toward the center.
  4. Cook until the eggs are set with no visible liquid remaining and reach 160°F, checked with a food thermometer.
  5. Remove from the heat and fold in most of the chopped Garlic Chives. Serve immediately with toast and the remaining chives sprinkled on top.

Kitchen Tip: Add chives near the end to keep their fresh flavor. For a dairy-free version, replace milk with water and butter with a little neutral cooking oil.

Storage: Refrigerate leftovers within 2 hours, or 1 hour above 90°F. Use within 3–4 days and reheat to 165°F.

Allergy Note: Contains eggs, dairy, and alliums; toast may contain wheat or other allergens. Do not serve this dish to pets.
