Texas Minimum Germination Rate: 75%.

Why Choose Red Acre Cabbage?

  • Heirloom variety: An established open-pollinated selection for gardeners who enjoy traditional vegetables.
  • Non-GMO seeds: Grow a familiar garden crop without genetically engineered seed.
  • Compact heads: A practical choice for small garden beds or sufficiently large containers.
  • Colorful harvest: Deep purple-red leaves add striking contrast to salads and side dishes; cooked color varies with ingredients and preparation.
  • Crisp, mild flavor: Enjoy freshly shredded leaves in slaw or cook them until tender.
  • Cool-season growing: Plan spring or fall crops around your local temperatures for good head development.

Planting Tips for Success

  • When to plant: Start indoors about 6–8 weeks before your last spring frost. For fall, work backward from your first frost using maturity time and extra time for slower autumn growth.
  • Sowing: Sow about 1/4 inch deep in seed-starting mix. Keep evenly moist, then harden seedlings off before transplanting.
  • Sunlight: Provide at least 6 hours of direct sun each day.
  • Soil: Choose fertile, well-drained soil amended with compost, ideally around pH 6.0–6.8.
  • Spacing: Set plants 12–18 inches apart in rows 24–36 inches apart to allow head growth and airflow.
  • Watering: Maintain even soil moisture. Mulch to reduce drying, and avoid large swings between dry and wet soil that can encourage splitting.
  • Fertilizing: Follow soil-test recommendations and fertilizer label directions; support early leafy growth without excessive feeding.
  • Support and protection: Staking is generally unnecessary. Monitor for cabbage worms and aphids; insect netting can help protect young plants.
  • Harvest: Cut heads at the base when firm. Refrigerate promptly and remove damaged outer leaves before preparing.

Red Acre Cabbage and Apple Slaw

A crisp, sweet-tart side dish made with harvested Red Acre cabbage, not the seeds in this packet. Serves 4. Preparation: about 15 minutes, plus 20 minutes chilling. No cooking required.

Ingredients

  • 4 cups finely shredded harvested Red Acre cabbage
  • 1 crisp apple, cored and cut into thin matchsticks
  • 1 medium carrot, peeled and shredded
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey, or maple syrup
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt, plus more to taste
  • 1/8 teaspoon black pepper

Directions

  1. Wash the cabbage, apple, and carrot under running water. Remove damaged outer cabbage leaves and cut away the core before shredding.
  2. Whisk vinegar, oil, honey or maple syrup, mustard, salt, and pepper in a large bowl.
  3. Add cabbage, apple, and carrot. Toss well until the dressing coats the vegetables.
  4. Refrigerate for 20 minutes, toss again, and adjust seasoning before serving.

Options: For extra crunch, add 1/4 cup toasted sunflower kernels just before serving. Use maple syrup instead of honey for a vegan version.

Storage: Refrigerate in a covered container and enjoy within 3 days. Refrigerate within 2 hours of preparation, or within 1 hour when temperatures are above 90°F. The apple may soften and the cabbage color may deepen as it sits.
