Why Choose Cubanelle Pepper?

  • Versatile Harvest: Use the elongated peppers fresh, sautéed, roasted, grilled, or filled with your favorite stuffing.
  • Colorful Fruit: Harvest yellow-green peppers or allow them to mature to red for variety in your garden and kitchen.
  • Productive Plants: Regular picking and consistent care support repeated harvests during warm weather.
  • Distinctive Shape: Approximately 5-inch, tapered, dimpled pods are easy to slice into strips for skillet dishes.
  • Heirloom and Non-GMO: Grow a traditional open-pollinated variety; seed saving requires appropriate isolation from other compatible peppers.

Planting Tips for Success

  • Start Indoors: Sow about 1/4 inch deep in seed-starting mix 8–10 weeks before your last expected frost. Provide steady warmth and bright light after emergence.
  • Transplant Carefully: Harden seedlings off gradually and plant outdoors after frost danger has passed and soil has warmed.
  • Sun and Soil: Choose at least 6–8 hours of direct sun and fertile, well-drained soil enriched with compost.
  • Spacing: Set plants approximately 18–24 inches apart, allowing room for branching and airflow.
  • Water Consistently: Keep soil evenly moist, not waterlogged. Mulch to conserve moisture and water at soil level.
  • Feed Sensibly: Follow soil-test guidance and fertilizer label directions. Avoid excess nitrogen that favors leaves over fruit.
  • Support Branches: Use a stake or small cage where fruit loads or wind might bend the branches.
  • Harvest Often: Snip peppers with clean pruners rather than pulling. Pick yellow-green or fully red according to your kitchen needs.
  • Container Care: Use a roomy container with drainage holes and monitor moisture more frequently during hot weather.

Skillet Cubanelle Peppers and Onions

Use harvested Cubanelle peppers, not the planting seeds in this packet. Makes 4 side-dish servings. Prep: 10 minutes. Cook: 15–20 minutes. Total: 25–30 minutes.

Ingredients

  • 6 medium Cubanelle peppers
  • 1 large yellow onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 garlic cloves, finely minced
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley

Directions

  1. Rinse and dry peppers. Remove stems and seed cores, then cut lengthwise into strips approximately 1/2 inch wide.
  2. Heat olive oil in a large skillet over medium heat. Add onion and cook for 4–5 minutes, stirring occasionally, until beginning to soften.
  3. Add pepper strips, salt, and black pepper. Cook for 10–14 minutes, stirring occasionally, until tender with lightly browned edges. Reduce heat if the vegetables begin to scorch.
  4. Add garlic and cook for 1 minute, stirring. Remove from heat and stir in lemon juice and parsley.
  5. Serve warm as a side dish, spoon over cooked rice, or tuck into sandwiches.

Storage and Safety

Refrigerate leftovers in a shallow covered container within 2 hours, or within 1 hour above 90°F. Keep at 40°F or below and use within 3–4 days. Reheat leftovers to 165°F. This recipe is for fresh cooking, not shelf-stable canning.
