Mammoth Sandwich Island Salsify is produced with heirloom seeds. It features Easy-to-grow roots, 1 to 1 and 1/2 inch diameter, and 8 inches long, and have an oyster-like flavor. Best harvested after frost, 'Sandwich Island Mammoth' is an excellent keeper.  Use stewed, baked, or in a cream sauce. Salsify can be boiled, mashed, or fried like a potato, and it makes a yummy addition to soups and stews. Gardening expert Barbara Damrosch recommends simply peeling the roots, steaming them for 15 to 30 minutes, and then browning them in butter. You can even eat the leaves. “The light-colored part of the leaf, the bottom six inches or so, is tender and delicious, like the bottom of a leek,” Damrosch says, “so it gets a thorough washing and then a quick butter sauté, along with the roots.”   Harvest in 110 days. Germination rate about 80% or better.
